    I've always loved tater tot casseroles like my Ultimate Tater Tot Casserole, so when I saw a taco-inspired version in a family cookbook, I had to try it. I wasn't sure the tater tots would stay crispy, but they baked up perfectly and made this taco tater tot casserole even better. My son went back for seconds, and we loved having easy leftovers, proof this Taco Tater Tot Bake is a weeknight winner.

    Ingredients
      

    • 1 lb lean ground beef or turkey
    • 1 small onion diced
    • 3 garlic cloves minced
    • 1 pkt taco seasoning or 2 tablespoon homemade
    • 16 oz frozen corn
    • 4 oz diced green chiles
    • 12 oz black beans drained and rinsed
    • 2 cups shredded Mexican cheese blend divided
    • 16 oz frozen tater tots
    • 10.5 oz red enchilada sauce

    Instructions
     

    • Preheat oven to 375°F.
    • In a large skillet over medium heat, cook ground beef, onion, and garlic until fully browned, breaking into crumbles. Drain excess grease.
    • Stir in taco seasoning, corn, green chiles, and black beans. Cook until heated through.
    • Transfer mixture to a large bowl and gently stir in 1 cup of shredded cheese and the frozen tater tots.
    • Spread ⅓ of the enchilada sauce evenly over the bottom of a 9×13 baking dish.
    • Spread the tater tot mixture evenly into the dish.
    • Pour remaining enchilada sauce over the top.
    • Bake for about 40 minutes. During the last 5 minutes, sprinkle remaining cheese on top and return to the oven until melted and bubbly.
    • Let rest for 5 minutes before serving.

      This was a huge hit with my whole family. So, now I’m cooking this for a homeless shelter tomorrow. I prepared the recipe up through the baking part, and I’ll refrigerate, and bake tomorrow.

      I’m trying this out tonight. Looks yummy! I didn’t have enchilada sauce so I used homemade salsa with just a little spiced tomato sauce. I also used crispy crown tots. And I added a little hot sauce to spice it up just a little.

      Im going to give this a shot but instead of the enchilada sauce I’m going to try picante. I always use salsa in my meatloaf and it turns out wonderful and I think with the taco taste in this dish salsa may be a positive substitution.

      I topped with black olives and green onions before baking. After it cooked and cooled slightly, I topped with shredded lettuce, shredded cheese, crumbled tortilla chips and dollop with sour cream,salsa, and pickled Jalapeños. Really good, and helped with eye appeal.

      This sounds really good, thanks for posting it!!! May have to wait to make it for a pot luck since there’s only 2 of us and our dinner’s are small (that’s how we lose weight (100 lbs between the 2 of us so far)!!! Or might see if I can 1/2 the recipe since I really don’t want to wait!! ALSO — when you had the Rotel, do you cut the sauce or it’s in addition to all the liquid going in??

        Tater tots are sliced/cut fried potatoes, typically found in the frozen food section of your grocery store. They are near the French fries and other potato products 🙂
