I don’t know about you, but I love an easy breakfast casserole! One that is hearty, flavor packed, takes only a few minutes of prep time, and uses simple ingredients. This Pillsbury Biscuit Casserole is just that! Perfect for weekends, brunch, Holidays, showers, or hosting guests/ family. The best part is that it can be prepped the night before and simply placed in the oven the next morning! Ingredient Notes

- Eggs– you’ll need 5 large eggs, room temperature is best as that allows them to incorporate into the mixture easier.
- Milk– again, make sure it’s room temperature. Any type of milk including non-dairy works great, we use 2% since that is what we have on hand at all times.
- Biscuits– you’ll need a 16 ounce package of refrigerated biscuits. I use Pillsbury grands refrigerated biscuit dough located near the cinnamon rolls at your grocery store. Any brand works. If you don’t have access to pre-made biscuits, you can use THIS recipe to make homemade buttermilk biscuits.
- Scallions– you’ll need 6 scallions, chopped. You can also use white onions or yellow onions, diced.
- Cheese– shredded Cheddar cheese is my favorite, however, Colby Jack cheese works great too.
- Sausage– cooked and crumbled, you can also use bacon or ham if desired.
Substitutions and Variations
To make this more customizable, here are some great ways to change up this Sausage Breakfast Biscuit Casserole!
- Optional Veggies– saute some spinach, diced red bell peppers, mushrooms, or fresh Herbs.
- Seasonings– to add more flavor, feel free to add 1 teaspoon salt, garlic powder, and black pepper. You can also add a splash of hot sauce, salsa, or sour cream to the top once ready to serve.
- Protein– this canned biscuit breakfast casserole is a great way to use up any leftover meat from the Holidays. Ham, breakfast sausage, and bacon all work perfectly! If using sausage, turkey sausage and pork sausage are great options too.
- Cheese– if you don’t want to use Cheddar Cheese, you can also try Mozzarella, Colby Jack, Pepper Jack, or any blend you have on hand. Sprinkle additional Cheddar cheese over the top of the casserole before baking if you like a cheesy meal!
How to make Breakfast Casserole with Sausage
This sausage egg biscuit casserole is one of the easiest recipes and turns out perfect every time. It requires only 6 ingredients and can be started and baked in less than an hour. To save time, be sure to prep this the night before or in advance of when needed.
- Prep– preheat oven to 350 degrees and cook your sausage in a large skillet over medium heat. While sausage is cooking, you can quarter the biscuits. PRO TIP: Use a pizza cutter to easily slice the biscuits into fourths. Whisk the eggs with milk in a large bowl.
- Combine– place the biscuit pieces into the egg mixture and toss to coat. Add in the cooked sausage, cheese, and scallions. If adding any additional seasonings, add them in now.
- Bake– pour mixture into a 9×13-inch baking dish and place in oven to cook about 25-30 minutes. Serve with desired toppings.
Storage
MAKE AHEAD: Prepare biscuit egg casserole through step 4, then cover with aluminum foil and refrigerate overnight. Uncover and bake, adding a few minutes to the cook time. LEFTOVERS: cover dish with plastic wrap and foil and place in refrigerator 3-4 days. You can also store individual pieces for easier on the go meals. If freezing, place leftovers in a freezer bag or airtight container up to 3 months. Thaw before reheating. REHEATING: if you are reheating leftovers, I recommend placing in microwave for 30 second increments until heated through. You can also heat in the air fryer at 350 degrees for 5-10 minutes, just watch to make sure it doesn’t burn.

Breakfast Casserole with Biscuits Recipe
Ingredients
- 5 eggs
- ¼ cup milk
- 16 oz Pillsbury biscuits
- 6 scallions *chopped
- 1 cup cheddar cheese *shredded
- 1 lb breakfast sausage *cooked, can use bacon if desired
Instructions
- Mix the eggs and milk in a bowl.
- Cut each individual biscuit into quarters and drop into the egg mixture. Toss to coat thoroughly.
- Add in the scallions, cheddar cheese, and cooked sausage/bacon.
- Pour mixture into a 9 x 13 pan evenly and place in preheated oven, 350 degrees.
- Cook for about 28-30 minutes, or until golden brown.
