A few nights ago, I was in the mood for a quick and easy dinner. Since I had breakfast sausage on hand in my freezer, I decided to make a “breakfast dinner”. Typically, I am not a fan of breakfasts, but when casseroles are involved, I am game! Nothing beats a good casserole, right?! Comfort food at its finest!
This casserole is incredibly simple to make and you can change it up depending on what you want. If you prefer bacon, cook some up and use it in place of the sausage. Add as much or as little as desired! Play around with combinations and make it your own, the possibilities are endless!! Add in some veggies, perhaps change up the cheese, or even add a splash of hot sauce on top prior to serving!!

Biscuits and Gravy Breakfast Casserole
My entire family, kids included, enjoyed this and then the next morning, my hubby and I had the leftovers for breakfast!
This can also be great for having company over because you can prepare it the night before and simply pop it in the oven when ready!! If you prepare this once it has been chilled, simply add some a few minutes to the cook time!
If you are preparing a meal for another family, this is a great option due to how family friendly it is as well! Using pre-made biscuits, this shortcut casserole has been a favorite in my family for several years and is one that we especially enjoy making at Christmas and other Holidays for a breakfast treat!
Ingredients needed:
5 eggs
1/4 cup milk
16 oz. Pilsbury biscuits
6 scallions, chopped
1 cup cheddar cheese
1 lb sausage, cooked OR bacon

Biscuit Breakfast Casserole

Ingredients
- 5 eggs
- 1/4 cup milk
- 16 oz Pilsbury biscuits
- 6 scallions *chopped
- 1 cup cheddar cheese *shredded
- 1 lb breakfast sausage *cooked, can use bacon if desired
Instructions
- Mix the eggs and milk in a bowl.
- Cut each individual biscuit into quarters and drop into the egg mixture.
- Toss to coat thoroughly.
- Add in the scallions, cheddar cheese, and cooked sausage/bacon.
- Pour mixture into a 9 x 13 pan evenly and place in preheated oven, 350.
- Allow to cook for about 28-30 minutes.

CAn you use frozen biscuits that have been thawed? Would cook time be different

Absolutely! As long as they are thawed, you can keep the cook time the same!

I like bacon extra crisp. Does the cooked bacon get soggy when cooked in casserole?

Nope, not soggy! However, if you want extra crispy, cook it til desired crispness and then assemble the casserole! I love bacon when its just under burnt, haha!

Haha, I myself had to look them up years ago. Its actually a version of green onions. Good ol’ green onions work too, but scallions are slightly different!

Nope, they cook in the casserole! Only thing you pre cook is the sausage or bacon!!
