    A few years back, Avocado Toast became all the rage around Pinterest, social media, and friends! Since then, so many different flavor variations and combinations have been created, but this Tomato Avocado Toast is one version that has been my tried and true favorite from the beginning! Using just a few simple ingredients, this tomato and avocado toast comes together quickly and can also be fully customizable. From kids to adults, this is a recipe everyone can enjoy! We love enjoying our toast with a serving of fresh fruit, my Spinach Mushroom Quiche, or Ham and Broccoli Crustless Quiche!

    Ingredient Notes

    Below is a brief overview of each ingredient needed to make avocado tomato toast. To see printable recipe card with exact amounts and step by step directions, scroll to the bottom or click the “jump to recipe” button at the top.

    • Tomatoes– you’ll want to use sweet cherry tomatoes as they have the perfect texture and sweetness. You will be roasting them for even more flavor (unless time doesn’t permit).
    • Bread– sourdough bread is my favorite, however, you can also use whole grain bread, any type of crusty bread, or even sandwich bread.
    • Avocados– use avocados that are room temperature and even if overripe, that is okay. They are easier to mash if ripe and tend to taste better.
    • Feta Cheese– crumbled Feta cheese is my favorite addition, however, you can omit or use goat cheese, blue cheese, or mozzarella cheese if preferred.
    • Basil– freshly chopped Basil adds the perfect amount of flavor to the top. A little bit goes a long way.
    • Lemon Juice– fresh lemon juice is best, this is used to combine with the avocado for additional flavor as  well as helps to keep the avocado from turning dark too fast.
    • Olive Oil– use your favorite flavor as this is used to roast the cherry tomatoes and also mix in with the mashed avocado.
    • Salt/ Black Pepper– season to taste.

    Variations

    The best part about this recipe is that it is fully customizable with minimal prep time and can be made as extravagant or as simple as desired. Short on time? Keep it simple! Making this a hearty meal? Add a few extra add on’s. Here are our favorites:

    • If you like a little heat, sprinkle red pepper flakes over the tomatoes as they roast, or on top of the mashed avocado. You can also add some Sriracha Sauce to the top or to the avocado mixture for Sriracha Avocado Toast.
    • Add your own Herbs in place of Basil. Parsley, Fresh cilantro, Dill, or even Thyme are great additions.
    • Use additional seasonings to flavor the toast. Everything But the Bagel Seasoning, Cajun, Lemon Pepper, or add a Balsamic Glaze as the finishing touch.
    • Flaky sea salt or chopped red onions add a nice finishing touch before serving.
    • For more protein, add some cooked, crumbled bacon or chopped ham to the top. Even a cooked, fried egg on top is delicious.
    • Some people aren’t fans of cherry tomatoes and that is okay. If you want to skip the roasted tomatoes part, that works just as easily! You can also use Roma tomatoes, heirloom tomatoes, beefsteak, or on the vine. Just chop or slice the tomato into desired size and add on top.

    Tips for Success

    Making this Avocado and Tomato Toast is easy and quick! Here are some tips for success!

    • If serving this as an appetizer, use slices of baguette in place of the sourdough bread.
    • Ensure your avocado is ripe before slicing and using. A ripe avocado will be very dark green. If it’s bright green and hard, it’s under-ripe. If it looks black and mushy, it’s past its prime. It should feel firm, but will yield to gentle pressure. It will be soft, but not mushy.
    • This avocado toast with tomato and feta is best served freshly made. I don’t recommend making ahead of time as the colors will darken from the avocado and things get a bit mushy. You can chop your ingredients ahead to save time, but slice avocado when ready to assemble and serve fresh!
    • To easily mash the avocado, cut the avocado in half, remove the seed and skin, and then mash the avocado directly on the piece of toast with a fork until smooth and creamy avocado. If preferred,  you can also mash the avocado in a bowl or on a plate, and transfer to the toast.

    What to pair with your Avocado Toast with Tomatoes

    Although this is a full meal or snack option on it’s own, if you’re looking for more side options, you can add scrambled eggs or a fried egg. Even a hard boiled egg is a great, high protein option. We love adding my French Toast Casserole or a Quiche as a side option when serving to a large crowd. We also serve some fresh fruit with our toast and sometimes add a fluffy waffle or simple homemade pancakes! So many great options, you can’t go wrong choosing any or all!

    Easy Avocado Toast with Roasted Tomatoes Recipe

    Ingredients
      

    • 6 Cherry Tomatoes
    • 2 slices Sourdough Bread
    • 1 Avocado roughly diced
    • 2 tablespoon Feta Cheese crumbled
    • 1 tablespoon Basil chopped
    • ½ lemon juiced
    • Extra Virgin Olive Oil
    • Salt/ Black Pepper

    Instructions
     

    • Roasted Tomatoes: In a small baking dish combine cherry tomatoes with a drizzle of olive oil and a pinch of salt and pepper. Place in the oven at 390 degrees F until they begin to lightly char and wrinkle.
    • Smashed Avocado: In a medium sized mixing bowl add avocado, basil, a squeeze of lemon juice, a drizzle of extra virgin olive oil and good pinch of salt and pepper. Lightly smash with a fork, leaving a few lumps here and there for some texture.
    • Toast: Divide smashed avocado between 2 slices of toast, then top with crumbled Feta cheese. Add roasted cherry tomatoes on toast, drizzle over some of the tomato juices from the baking dish. Serve and enjoy!
