Ingredients Needed for Fluffy Pancakes:
Milk
White Vinegar
Flour- all purpose
Sugar
Baking Powder
Baking Soda
Salt
Egg
Butter- melted
How to make the BEST Fluffy Pancakes
Combine milk with vinegar in a medium bowl. Set aside for about 5 minutes to let the milk “sour”.
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
Whisk in egg and melted butter into soured milk.
Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
Heat a large skillet over medium heat and coat with cooking spray.
Pour 1/4 cup of batter onto the skillet and cook until bubbles appear on the surface.
Flip with a spatula and cook until browned on other side.
Serve warm with butter and syrup, powdered sugar, fruit or topping of choice
*If you have buttermilk on hand, feel free to use in place of the white vinegar/milk mixture above
How to cook the Perfect Pancake
- Preheat your nonstick pan or griddle on medium heat first. Once hot, lower the heat down to low-medium heat.
- Use a 1/4 cup measuring cup to pour your batter so you get perfect, evenly sized pancakes.
- Allow the pancakes to cook properly! You can’t rush perfection! Let that under-side cook to a beautiful golden-brown color, and just when bubbles start forming on top and around the surface (batter side), they are ready to flip.
- Grab a good, plastic spatula and slide it underneath the pancake to flip the pancakes over.
Tips for the BEST Fluffy Pancakes:
Do Not Overmix- overmixing your pancake batter will deflate a lot of the air bubbles in your batter causing them to be flat and not fluffy
Fresh, fresh, fresh- Make sure your baking powder/soda are fresh, so you ensure a good rise
Use batter quickly- try not to let it sit for a while on the counter. Prepare the batter and coop up those pancakes. It is better to reheat the cooked pancakes versus saving the batter.
To store: these are best served fresh and warm, however, they can be refrigerated in an airtight container for 2-3 days.
