Ingredient Notes
Full printable recipe card found below with exact ingredient amounts and directions.

- Avocado: Use large, ripe avocados so there’s enough room for the egg filling. They should give slightly when gently squeezed.
- Cheese: Sharp cheddar adds great flavor, but Monterey Jack, Colby Jack, or Pepper Jack are all great options.
- Bacon: Cook until crisp so it adds texture and doesn’t become chewy during cooking.
- Seasoning: Use your favorite seasoning blend to customize the flavor. We love Chupacabra, Slap Ya Mama, or a simple combination of salt and pepper.
Easy Ways to Change It Up
- Swap the bacon for cooked breakfast sausage or diced ham.
- Use Pepper Jack, Monterey Jack, or Colby Jack cheese for a different flavor.
- Add diced bell peppers, onions, mushrooms, or spinach to the filling.
- Top with sliced green onions, salsa, or hot sauce before serving.
- Sprinkle with Everything Bagel Seasoning for an extra boost of flavor.
How to Make Breakfast Stuffed Avocados

Step 1. Remove the pit from the avocado and scoop out a small amount of the flesh to make room for the egg. Place the avocado halves into a skillet.

Step 2. Crack an egg into each avocado half and sprinkle with your desired seasoning.

Step 3. Top each avocado half with the shredded cheese and crumbled bacon.

Step 4. Place the skillet on the grill grates and cook for 15-20 minutes, or until the eggs are cooked through and the cheese has melted. NOTE: Use high heat on a grill or smoker. If making these on the stovetop, use medium-high heat.
Tips for Success
- Use large, ripe avocados so there’s enough room for the egg filling.
- Scoop out about 1 tablespoon of avocado flesh before adding the egg to help prevent overflow.
- Use large eggs rather than extra-large eggs, which can spill over the sides.
- Cook until the eggs are set to your liking, keeping in mind they’ll continue cooking slightly after being removed from the heat.
Serving Suggestions
These breakfast stuffed avocados are filling enough to enjoy on their own, but they pair well with a few simple sides:
- Fresh fruit or a simple fruit salad
- A side of crispy hash browns or Mississippi mud potatoes
- A batch of Cinnamon Sugar Breakfast Muffins for something sweet
- A hot cup of coffee or a glass of RumChata Iced Coffee for weekend brunches
Storage & Make-Ahead
This stuffed avocado breakfast is best enjoyed fresh, as avocados can brown and soften after being stored. If you’d like to get a head start, cook and crumble the bacon ahead of time so everything is ready to assemble when needed.

Hi. How long and at what temp did he smoke it?
Kristin says
375 degrees for about 15-20 minutes!
Vickie says
Please clarify-did you hubby smoke this recipe or grill it? If he smoked it, did he use a special flavor of wood chips for the smoke? We have an electric smoker and a pellet smoker plus a grill. I’m sure my hubby would prefer to use the pellet smoker but I’m just interested in the wood chip flavor.
Kristin says
My hubby did smoke this on his Traeger (pellet smoker) using mesquite pellets. It was quite tasty!!
Heather says
What is the consistency of a baked avacado? Is it mushy? I’m drawn to try this recipe but I don’t think I’ve ever had avacado cooked. Am I missing out on something fabulous?
Kristin says
It’s not really mushy, its warm and basically tastes like a ripe avocado. Squishy avocado, mixed with the egg, cheese, and bacon. Its surprisingly good!!
