    Hash Brown Potato Bake

    Hash Brown Potato Bake is a classic casserole dish associated with comfort and family. Packed with flavor, this dish compliments any meal!

    You may have heard this dish called Funeral Potatoes in lieu of Hash Brown Potato Bake. Funeral potatoes is a traditional potato casserole that is popular in the American Intermountain West and Midwest. It is often called “funeral” potatoes because it is commonly served as a side dish during traditional after-funeral dinners, but it is also served at potlucks, and other social gatherings, sometimes with different names.

    In my family, we always called it our potato bake, so I didn’t want to change that up! Plus, funeral potatoes sounded sad to me and this dish is anything but!

    When I was a kid, my mom would make this dish for any potluck or gathering. It was (and still is) a favorite of mine!

    The topping definitely is a favorite of mine. The crunchy cereal layer compliments the creamy potato mixture and combines into a dish you don’t want to pass up!

    Over the years, various family members have made these and added their own fun twist to them. Some add in a little hot sauce to kick it up a bit! I have also heard people add in some diced ham and cooked broccoli to make this a one pan meal! Great options, right?!
    You can also buy the frozen hash browns that have the diced onions and peppers mixed in for added flavor! My mom started doing that years ago and now, its our go to method of enjoying these!

    Hash Brown Potato Bake

    Equipment

    • Mixing Bowls
    • 9x13 baking pan

    Ingredients

    • 10.5 oz cream of chicken soup
    • 1 pint sour cream
    • salt/pepper to taste
    • 10 oz cheddar cheese, shredded
    • 2 lbs frozen hashbrowns (shredded or diced work)
    • 1/2 cup onion, chopped
    • 2 cups cornflakes cereal, crushed
    • 1/4 cup butter, melted

    Instructions

    • Grease a 9×13 baking pan.
    • Mix together the cream of chicken soup, sour cream, salt, pepper, cheddar cheese, hash browns, and onion in a bowl.
    • Put into baking pan.
    • Mix together the melted butter and cornflakes.
    • Sprinkle on top of potato mixture.
    • Bake in a preheated oven, 350, for about 45 minutes.
    • Remove and serve!

      I haveade this and cut up a can of spam into little squares then mixed it up serves as aain dish.

      Do you think you could use rice chex or crispies instead of corn flakes?

      Possibly rice chex will work, I don’t think the krispies will since they are so small. Maybe even corn chex?

      You could try that, however, it may change the taste due to the additional sugar in frosted flakes 🙂

      I use the kind called potatoes o’brien (it has the peppers mixed in for added flavor), otherwise you can use the hash browns that are in small cubes 🙂

      Plenty of salt in the soup… they don’t need any additional! Instead of the cornflakes, I just sprinkle a little dill on top.

      I use the McCain”s cubes , & I’ve crushed potato chips for the top .I’ve been doing this for years & everyone who I have served it to has loved it.

      I am definitely trying this. In our family, we have a dish called Crazy Potatoes that is very similar to this recipe. It asks for a can of Cheddar Cheese soup though. 😀

      I’ve made this many times. Always a hit. But I prefer crushed potato chips instead of the corn flakes.

      When I lake the hash brown recipe, I mix in the cheddar cheese to the other ingredients, it keeps the cheese from over browning or burning that way.
