You may have heard this dish called Funeral Potatoes in lieu of Hash Brown Potato Bake. Funeral potatoes is a traditional potato casserole that is popular in the American Intermountain West and Midwest. It is often called “funeral” potatoes because it is commonly served as a side dish during traditional after-funeral dinners, but it is also served at potlucks, and other social gatherings, sometimes with different names.
In my family, we always called it our potato bake, so I didn’t want to change that up! Plus, funeral potatoes sounded sad to me and this dish is anything but!
When I was a kid, my mom would make this dish for any potluck or gathering. It was (and still is) a favorite of mine!
The topping definitely is a favorite of mine. The crunchy cereal layer compliments the creamy potato mixture and combines into a dish you don’t want to pass up!

Hash Brown Potato Bake
Equipment
Ingredients
- 10.5 oz cream of chicken soup
- 1 pint sour cream
- salt/pepper to taste
- 10 oz cheddar cheese, shredded
- 2 lbs frozen hashbrowns (shredded or diced work)
- 1/2 cup onion, chopped
- 2 cups cornflakes cereal, crushed
- 1/4 cup butter, melted
Instructions
- Grease a 9×13 baking pan.
- Mix together the cream of chicken soup, sour cream, salt, pepper, cheddar cheese, hash browns, and onion in a bowl.
- Put into baking pan.
- Mix together the melted butter and cornflakes.
- Sprinkle on top of potato mixture.
- Bake in a preheated oven, 350, for about 45 minutes.
- Remove and serve!

When I lake the hash brown recipe, I mix in the cheddar cheese to the other ingredients, it keeps the cheese from over browning or burning that way.

I am definitely trying this. In our family, we have a dish called Crazy Potatoes that is very similar to this recipe. It asks for a can of Cheddar Cheese soup though. 😀

I use the McCain”s cubes , & I’ve crushed potato chips for the top .I’ve been doing this for years & everyone who I have served it to has loved it.

Plenty of salt in the soup… they don’t need any additional! Instead of the cornflakes, I just sprinkle a little dill on top.

What kind of frozen hash browns? The shredded kind?

I use the kind called potatoes o’brien (it has the peppers mixed in for added flavor), otherwise you can use the hash browns that are in small cubes 🙂

You could try that, however, it may change the taste due to the additional sugar in frosted flakes 🙂

Do you think you could use rice chex or crispies instead of corn flakes?

Possibly rice chex will work, I don’t think the krispies will since they are so small. Maybe even corn chex?
