- Chicken– boneless skinless chicken breasts work best in this recipe, however, you can also use chicken thighs, chicken drumsticks, etc. You will just want to adjust the cook time to ensure its cooked through.
- Mayonnaise– opt for full fat mayonnaise as it adds the most flavor. Are you team Hellman’s or team Dukes? Of course, if you are counting calories or want something a bit healthier, feel free to use sour cream or plain Greek yogurt at a 1:1 ratio.
- Parmesan Cheese– freshly grated Parmesan cheese is best for this recipe versus using the green can, however, if you only have that on hand, it works as well!
- Salt/ Ground Black Pepper– I use seasoning salt as it adds even more flavor, you’ll season to taste.
- Garlic Powder– this adds additional flavor. Feel free to also use fresh minced garlic as well.
How to make Classic Melt in Your Mouth Chicken
OK, now you’re ready to get cooking! Here’s how to make this super easy chicken recipe:
- In a small bowl, combine the mayonnaise, Parmesan cheese, seasoning salt, black pepper, and garlic powder.
- Spread the mixture evenly on top of the chicken breasts.
- Place chicken into a baking dish and bake in preheated oven, 375 degrees, for about 45 minutes, or until cooked through.
- Remove from oven and serve!
Variations
- To add some heat– add in some red pepper flakes.
- For an added topping– sprinkle bread crumbs on top of the chicken just before baking is a great addition to be used.
- Increase flavor through spices– onion powder, Herbs, all-purpose seasonings, etc. can all be added to the mayo sauce.
- In place of the mayo– feel free to use sour cream, Greek yogurt, or even plain cream cheese.
- Use your favorite cheese– you can never have too much cheese, right? Feel free to add in Mozzarella, Asiago, Romano, Pepper Jack, Gouda, etc.
- Chicken– chicken breasts, chicken breast halves, thighs, drumsticks, etc. all work great, just adjust cook time to ensure chicken is cooked through (to 165 degrees F).
- If you want to cook the chicken in the air fryer, cover with the mayonnaise sauce before placing chicken in air fryer to cook on high until internal temperature reaches 165 degrees using a meat thermometer, about 20 minutes.
- Brown the top– I love adding a little golden brown color to the cooked chicken and to do so, simply place the pan under the broiler for about 2-3 minutes.
Storing Leftovers
- If you’re lucky enough to have leftovers, allow to fully cool before wrapping in plastic wrap or aluminum foil. You can also place the chicken in an airtight container.
- Store in the refrigerator up to 3 days or freeze the cooked chicken up to 3 months.
- To reheat, allow to fully thaw if frozen and reheat in the microwave.

Sure, however, I don’t know how it would thaw because the sauce on top is mayo/dairy based and sometimes it doesn’t look very appealing once thawed. It is okay to do, but just don’t judge appearance, haha!

Made this tonight; used a combination (half & half) mayo and Greek yogurt; added a tsp of Dijon mustard, a few shakes Worcestershire and some hot sauce. I used a minimum of salt, but sprinkled the garlic powder and fresh ground pepper directly on the chicken; added a sprinkle of fresh grated Parmesan and some Italian seasoned bread crumbs (both sides); drizzled just a bit of olive oil over the top; baked them in my convection toaster oven at 375 for 30 min; then broiled for 5 to brown the top. My husband is very picky and hard to please and he loved this. I served it with arborio and black rice risotto with artichoke hearts. All very yummy and I’ll make this chicken again with varying treatments. Thank, Yummly and Cookin’ Chicks!

A huge hit a family dinner Saturday nite. Even the (sometimes) picky g’daughter LOVED it. A green salad, garlic bread & a fresh fruit salad made the dinner healthy & complete. The chicken was moist & tender. We had the leftovers for a cold lunch on Sunday.
Tripled the mayo mix so plenty left over for another meal later this week. The mayo mix is a great base for many of the suggested substitutions. Think I’ll add the green chilis for dinner with the hubby.
Added bread crumbs the last 15 minutes for a crunch I knew my fam would love. Gonna use the yogurt next time.
This is an easy addition to the rotation.

If I use a slow cooker do I have to put water in it and can I use garlic salt instead of powder?

I would add about 1/4 cup water if chicken is thawed. If chicken is frozen, no need to use additional water! As for garlic salt, no problem, just don’t add any additional salt as it may be a bit much. Hope you enjoy!!

I have only tried using both yogurt and mayo in this recipe, but don’t see why sour cream wouldn’t work as well! If you try it, be sure to keep me posted how the end result is! I always have sour cream on hand, so that would be a great alternative to use!

This is my next go to chicken recipe.Substituted 1 tsp. minced garlic, tsp. Bay Seasoning, 2 tsp. dried dill, 1 tsp. curry powder, and black pepper. Hubby doesn’t like parmesan cheese on his chicken. Tasted the mayo mix (used our favorite Dukes Mayo) and it was sooooo good. Can’t wait until the chicken is done. Used half a bag of frozen chicken tenders. Dredged each tender in the mayo mix to be sure every piece was nicely coated, then placed in my cast iron dutch oven. I didn’t have parmesan, seasoned salt, or garlic powder. So this is the reason for substitutes. Made my own seasoned salt (w/dill and curry powder). Thank you for sharing.

Hmmm, good question. Which cook settings do you have for your toaster oven? I have seen some that have cook settings similar to the oven such as temperature. If that’s the case, then yes. As long as the chicken gets cooked through, I don’t see why that wouldn’t work. Keep me posted if you try it!

That was the worse chicken I ever made..Very greasy even cut down on the mayo and added 1 cup of Parmesan cheese but it sat in a pool of oil and no one in my family could even eat it…I ended up throwing it all away..What a waste. I will never make it again and advise no one else to..sorry but I had to let you know the truth

I pound the chicken breasts down so they are thin, put the oven on 400, and bake for 15 minutes. Comes out completely cooked and moist. Sometimes I use honey mustard instead of mayo, gives it a bit of a kick.

I’ve been making this for years but I use Miracle Whip and I put the Miracle Whip on the entire chicken breast and then cover them with bread crumbs. It’s my son’s favorite way for me to cook chicken.

Thawed would be easier to work with since it cooks more evenly, however, if frozen, just increase the cooking time 🙂

I make this but one thing you missed on your recipe is that after spreading the mayo mixed with Parmesan cheese you are suppose to put bread crumbs on top …. but the best kind to use for this recipe is Panko breadcrumbs. Without the Panko breadcrumbs, all you will taste is the mayo. YUCK!
This recipe was from Kraft Foods and like I said everything you wrote in the ingredients is fine, but you missed the Panko….. for those that didn’t like this, make it again but use breadcrumbs after spreading on the mayo and Parmesan. I guarantee you will like it.

This is the best recipe for chicken. I actually fried mine in a butter/olive oil mix then kept it warm in the oven while I cooked up some roma tomatos in white wine, added a small amout of flour to thicken and served the chicken over the tomatos and spooned a litte sauce over the top. My man swears he HATES manyonaise but asks me to make this often. Thank you for the recipe

Any recommendations on which brand of Greek yogurt works best? There’s quite a different flavor between brands…some are more tart, sour, or chalky than others.

I made this for dinner tonight and while I liked the tangy taste to it, I thought it was way too salty. As I added the salt to the yogurt and cheese, I knew it was going to be too much for me. I think if I make it again, I will cut down on the salt–maybe use 1/2 tsp instead of 1.5 tsp’s.

This looks so good!! But fyi, my daughter and I are both lactose intolerant and I have found that coconut milk is a great alternative in recipes like this. I buy the can of full fat coconut milk and before opening shake vigorously for about a full minute and when you open it it is thick and creamy!! It works really great and since it has no real flavor of it’s own, like tofu it takes on the flavor of whatever you use it with! I will not however give up my cheese!!

You can use as much as desired, I typically just spread it on until its a nice even layer, and there is a little bit leftover of the coating 🙂

I notice that you call for boneless chicken. Is it also skinless? I ask because in the photo it looks like the skin may be on, but I’ve never seen chicken sold boneless WITH skin.

Hi!!! I use boneless, skinless chicken breasts in this recipe 🙂 The “skin” you are seeing is probably just the mayonnaise coating on top that browned up a bit 🙂

Trying this tonight loos and sounds so yummy.
Try using Mazritha cheese and browned butter and garlic on your pasta next time.
Grate some cheese to mix in then sprinkle some on top.

The first thing I thought when taking a bite of this was that it should be in a 5 star restaurant! I use Vegenaise in place of mayo. It tastes the same but is free of soy,egg,gluten. My wife came home from work late and said she wasn’t hungry until she took a bite of this and then she started eating some of my portion as well:)

Just depends on the size/thickness of the chicken. The chicken breasts I use are quite thick, so it takes longer, however, I have used smaller ones and it only takes about 30 minutes. 🙂

Has anyone tried this with “Light” Mayo like Hellman’s Light Mayonnaise? I fear there will not be enough Oil in it to make this dish as juicy. I think the flavor of Mayo would be better than the yogurt for this dish, but the FAT in mayo raises the calories by 50%

I just tried this with the light mayo last night since it was all I had on hand. It was delicious. It did change the flavor up slightly, but was still a hit with my family!!

I was wondering when you put it in slow cooker, do you put it on high and will it take just 6 hours? (im still getting used to the crockpot)

I haven’t tried it in the slow cooker, however, if the chicken is frozen, high for 6 hours should be great. If the chicken is thawed, I would do 4 hours 🙂

Hi! That is actually just spaghetti noodles cooked to al dente, drained, and then some butter, garlic cloves, and Parmesan cheese sprinkled on top! Delicious and simple 🙂

Phyllis, I used boneless skinless breasts and it wasn’t dry at all. I don’t eat skin, so I went with my normal chicken. It was amazing!!! You don’t need the skin.

Made this today, I was looking for something different for my family, as we love chicken, but I get bored. I had some HUGE chicken breasts, they were about a pound each, so I cut them into smaller pieces, and did this. We all loved it. It was so juicy! I have trouble eating dry meat, so it was perfect for me! I will have to try with the Greek Yogurt, but with the Mayonnaise it was really amazing! Thank you.

Great and quick recipe. Too much seasoned salt for me and I had more chicken. I would also put the chicken on a rack in the pan. My guy loved it so I will be making it again substituting the mayo for Greek Yogurt. I just won’t tell him!

Tried this several weeks ago and it was a big hit. Lastnight i switched the mayo for Miracle Whip and the seasonings for Mc Cormicks bbq seasoning and crumpled some Applewood smoked bacon on about 3/4 the way through cooking. It disappeared quick.
