Don’t you just love a good casserole?? Especially when the cooler weather hits?! I am a HUGE casserole fan anytime of the year, however, when the Fall season approaches, I automatically go into “comfort food” and “casserole” mode.
Years ago, I may have gone a bit overboard with the casseroles. I was making a new one just about every night and leftovers were either frozen or enjoyed for lunch the next day. My hubby was a trooper and happily enjoyed the dinners for about two months straight. Finally, one evening, he approached me and offered to start making dinners. Of course, I took him up on that offer for a bit, but wondered why he wanted to do that. He quickly (and quite gently) confessed he was a bit burned out of the constant casseroles. LOL!
Since then, yes, I still make them weekly, however, we change it up and add in some grilled meals, smoker dishes, and lots of variety! That way, we meet in the middle and don’t get tired of the same thing over and over!
Shredded chicken, tender tater tots, bacon bits, and cheddar cheese combined into a loaded tater tot chicken casserole that will have your mouth watering with every bite!
Last week, as I went through my freezer, I found some cooked chicken and a bag of tater tots that needed to be used up. My hubby had made extra bacon the weekend earlier, so I also found that and decided it needed to be included.
Within minutes, this casserole was assembled and ready for the oven! In fact, I was able to prep this earlier in the day, so once dinnertime came around, I simply placed it in the oven and moved on! Easy peasy, right?!
Not only did the house smell incredible as this cooked, but it was pure comfort food at its finest! Every bite was incredible and my entire family scraped their plates clean! The leftovers were just as tasty reheated the next day, but if you like to freeze leftovers, these would also freeze perfectly!

Love this. Just don’t get the concept of leftover bacon.
Kristin
Haha, bacon is almost never leftover in my house. My husband must have snuck it into the freezer when I wasn’t looking hence why I found it and had to use it up ASAP. Everything is better with bacon, right?? Hope you enjoy!!
