    Lemon Garlic Asparagus

    Last week, my hubby and I celebrated our 15-year wedding anniversary. Crazy to think it has already been 15 years, but time flies when you’re having fun, right?! Since our anniversary fell on a weeknight, we were busy with several camps for the kids, sports practices, and carpooling. Needless to say, we weren’t able to sneak away for dinner that evening, so we opted to make a tasty weeknight dinner at home!

    My hubby took it upon himself to plan the entire meal and not only cook it for us, but also do the dishes! I had the night completely off from cooking/cleaning and thoroughly enjoyed that. To say he outdid himself would be an understatement. He cooked us steak, mashed potatoes, and this easy sauteed asparagus recipe.

    Every single bite on my plate was incredible! The steak literally melted in our mouth. The potatoes had so much flavor and complimented the steak perfectly. However, the garlic lemon asparagus was the dish I couldn’t get enough of. The delicious garlic lemon flavor was just what I needed!

    Perfectly roasted in the oven, then drizzled with lemon juice and zest! Not only did it have incredible flavor, but it was so light and refreshing…perfect for the summer heat here in Houston!

    As we inhaled our plates, we both agreed that we would need to add this simple recipe to our side dish rotation. All you need are a few simple ingredients!

    Next time you’re trying to add a veggie to your meal, definitely give this Lemon Garlic Asparagus a try—it’s the perfect recipe that’s good for you and easy to make! You can even cook your asparagus in a skillet on your grill to keep the heat out of the kitchen!

    Lemon Garlic Asparagus Ingredients

    • Fresh asparagus 
    • Olive oil
    • Salt
    • Minced garlic cloves
    • Fresh lemon juice (zested and juiced)
    • Feta cheese

    Lemon Garlic Asparagus Instructions

    1. Preheat oven to 400 degrees.
    2. In a small bowl, combine the olive oil, salt, and minced garlic.
    3. Trim asparagus and then place onto a cookie sheet (or parchment paper) and brush the olive oil mixture evenly on top of all the asparagus.
    4. Place cookie sheet into preheated oven and allow to cook for about 13 minutes, or until tender.
    5. Remove from oven and squeeze the lemon juice on top of the roasted asparagus, followed by sprinkling the lemon zest evenly.
    6. Serve with feta on top if using and enjoy your lemon garlic roasted asparagus!

     

    Alternative Ingredients

    Next time you’re cooking up a storm and want to get creative in the kitchen, there are always ways to switch things up and try out new routes with recipes. Here are other common ingredients used when making this delicious side dish.

    • Parmesan cheese (this can be in replacement of or along with the feta crumbles)
    • Garlic powder (use this if you’re in a pinch and lacking fresh garlic)
    • Black pepper (use this if you want to kick up the spice level)
    • Red pepper flakes (this will also kick up the heat if you love spice)

     

    What to Pair with Lemon Garlic Asparagus

    For best results, pair your asparagus side dish with a pasta, casserole, or even something as simple as chicken. Here are a few suggestions to get you started:

    Ingredients

      Could I use any other cheese; not a fan of feta?

        You can omit the cheese altogher if desired, use Parmesan, mozzarella, etc. I enjoy it without cheese more times than putting cheese on it!
