    • Leftovers are just as delicious– since this recipe makes a full 9×13, changes are, you will have leftovers! Luckily, reheating tastes just as yummy as when made fresh. Enjoy as a lunch the next day or serve for dinner!

    Ingredients Needed to make this simple Chicken Broccoli Potato Casserole

    • Chicken– I used boneless, skinless diced chicken breasts in this recipe, cut into bite-sized pieces
    • Mayonnaise– any type works, we use avocado mayonnaise, but Duke’s and Hellman’s are great too
    • Potatoes– I use Gold Yukon potatoes, quartered
    • Broccoli– fresh broccoli florets are perfect in this recipe
    • Cheeses– fresh shredded cheese is best as it melts easier than the pre-shredded bags, we use Parmesan Cheese and Cheddar cheese
    • Salt/ Black Pepper– to taste
    • Garlic– fresh, minced garlic is best, however you can also use the jarred minced garlic or garlic powder to save on time

    Variations and Substitutions for this Chicken Potato Broccoli Casserole

    • Feel free to use plain Greek yogurt in place of the mayonnaise.
    • If you have sour cream, you can use ½ sour cream and ½ mayonnaise.
    • In lieu of golden Yukon potatoes, you can use red potatoes, sweet potatoes, white potatoes, etc.
    • Just before serving, sprinkle some green onions on top for added flavor.
    • Add in ½ lb. cooked/crumbled bacon for an added protein.
    • Although I haven’t tried it personally, I have heard from others that adding some melted butter to the top of the casserole just before baking is a savory addition.
    • Feel free to change up your vegetable to one of your liking if you aren’t a fan of broccoli.
    • Use cauliflower in place of the potatoes to make this lower in carbohydrates.

    How to make Creamy Chicken Broccoli Potato Bake

    1. Grease a 9 x 13 baking dish with cooking spray.
    2. In a medium bowl, combine the chicken, potatoes, broccoli, mayonnaise, black pepper, salt, and garlic.
    3. Spread mixture evenly into prepared baking dish.
    4. Sprinkle Parmesan and Cheddar cheese on top.
    5. Place pan in a preheated oven, 375 degrees, and bake for about 45 minutes, or until chicken is cooked through and potatoes are tender. *Adjust time according to potato size

    Equipment Needed

    • Sharp knife and cutting board for dicing the chicken, potatoes, and broccoli.
    • Garlic Mincer– to make using fresh garlic much easier.
    • Mixing bowl– to combine all the ingredients.
    • Casserole dish– I recommend a classic 9×13 glass pan.
    • Box Grater– for shredding the cheese in this recipe. Avoid pre-shredded bags as they are coated with an additive to prevent clumping and don’t melt easily.

    Chicken Broccoli and Potato Casserole Tips

    • This casserole is ready to remove from oven and serve when the chicken reaches an internal temperature of 165 degrees.
    • For a spicy addition, add a splash of hot sauce or sprinkle of red pepper flakes.
    • Check the potatoes throughout the cook process as you want them tender, but not mushy.
    • Put the casserole under the broiler for a few minutes to get a cheesy crust on top.

    What should I serve with this recipe for chicken and potato casserole?

    Since this is a one pan meal, technically, you don’t need to add anything when serving this as a meal. However, if you are like my family and like a few options on your plate, a simple side salad or fresh fruit pairs perfectly with this dish. You can also add a side of bread such as my Texas Roadhouse Rolls or Garlic Pull Apart Bread.

    Can I prepare this casserole ahead of time?

    Absolutely! In fact, I love preparing this meal in the morning and placing in the fridge until dinner. Cover with aluminum foil until ready to bake. I simply toss in the oven, add a few minutes since it is cold, and dinner is ready in no time!

    Can I freeze this casserole?

    Yes! You can cover and freeze this unbaked for up to 3 months. When ready to bake, simply allow to thaw overnight and place in the oven. You may notice a bit extra liquid from having been frozen, so use a slotted spoon when serving.

    What vegetables can I use in place of the broccoli?

    The sky is the limit when it comes to what you can add to this. I have used cauliflower, carrots, asparagus, green beans, and peas in this before. You can also add in some bell peppers, mushrooms, zucchini, etc.

    How long do you cook chicken and broccoli casserole?

    Typically, this casserole takes around 45 minutes to cook through. However, it can vary depending on the size of your diced chicken and potatoes. Check to make sure your chicken is no longer pink in the middle and the potatoes are tender.

    Storage Tips

    • Allow all leftovers to fully cool before placing into a container for storage.
    • Fridge– in an airtight container up to 3 days in refrigerator. Reheat in microwave until heated through.
    • Freezer– in a freezer safe container up to 3 months.

      I made this with non-fat Greek yogurt and broasted chicken. It was easy to assemble and tasted great. Will definitely make it again!

        Hmmm, I am always a bit hesitant due to the mayonnaise in this. It doesn’t tend to freeze well and always has a curdled look to it once thawed 🙁

      Disappointing. Followed recipe to the letter. Although the mayo added a nice flavor it curdled making it visually very unappealing. Only 2 servings were eaten – the rest was thrown away.
