- Chicken– I used boneless, skinless diced chicken breasts in this recipe, cut into bite-sized pieces
- Mayonnaise– any type works, we use avocado mayonnaise, but Duke’s and Hellman’s are great too
- Potatoes– I use Gold Yukon potatoes, quartered
- Broccoli– fresh broccoli florets are perfect in this recipe
- Cheeses– fresh shredded cheese is best as it melts easier than the pre-shredded bags, we use Parmesan Cheese and Cheddar cheese
- Salt/ Black Pepper– to taste
- Garlic– fresh, minced garlic is best, however you can also use the jarred minced garlic or garlic powder to save on time
Variations and Substitutions for this Chicken Potato Broccoli Casserole
- Feel free to use plain Greek yogurt in place of the mayonnaise.
- If you have sour cream, you can use 1/2 sour cream and 1/2 mayonnaise.
- In lieu of golden Yukon potatoes, you can use red potatoes, sweet potatoes, white potatoes, etc.
- Just before serving, sprinkle some green onions on top for added flavor.
- Add in 1/2 lb. cooked/crumbled bacon for an added protein.
- Although I haven’t tried it personally, I have heard from others that adding some melted butter to the top of the casserole just before baking is a savory addition.

- In a medium bowl, combine the chicken, potatoes, broccoli, mayonnaise, black pepper, salt, and garlic.

Absolutely! In fact, I love preparing this meal in the morning and placing in the fridge until dinner. Cover with aluminum foil until ready to bake. I simply toss in the oven, add a few minutes since it is cold, and dinner is ready in no time!
Can I freeze this casserole?
Yes! You can cover and freeze this unbaked for up to 3 months. When ready to bake, simply allow to thaw overnight and place in the oven. You may notice a bit extra liquid from having been frozen, so use a slotted spoon when serving.

Typically, this casserole takes around 45 minutes to cook through. However, it can vary depending on the size of your diced chicken and potatoes. Check to make sure your chicken is no longer pink in the middle and the potatoes are tender.
