Why You’ll Love This Recipe
- Uses simple ingredients– Made with everyday pantry staples you likely already have on hand. It's quick, easy, and budget-friendly, just like my Forgotten Chicken Casserole.
- Packed with flavor– Classic comfort food with a creamy chicken filling topped with a golden, buttery Ritz cracker topping.
- Can be prepped ahead– Save time by assembling this casserole earlier in the day. When dinnertime rolls around, just pop it in the oven and you're set.
- Freezer-friendly– Freeze it before baking or store leftovers for later. Either way, this casserole reheats beautifully.
🥄✨ Kristin's Pro Tip: I've found that crushing the Ritz crackers by hand instead of in a food processor gives the topping better texture. You get those buttery crumbs and little crunchy bits!
Ingredient Notes
See the printable recipe card below for exact measurements.

- Cream of Chicken Soup– Creates the creamy base. Cream of mushroom or celery also works.
- Sour Cream– Adds richness and tangy flavor.
- Green Onions– Add a mild pop of flavor throughout.
- Salt/Pepper– Season to taste.
- Onion/Garlic Powder– Simple pantry seasonings that add depth.
- Chicken– Cooked, shredded chicken breasts or thighs both work well. Rotisserie chicken is a great time-saver.
- Corn– Adds sweetness and texture. Swap with peas, broccoli, or carrots if desired.
- Ritz Crackers– Crushed for a buttery, crunchy topping.
- Butter– Melted to help the topping bake up golden.
Variations
- Swap cream of chicken soup with cream of mushroom or cream of celery.
- Add fresh herbs like chives or parsley for extra flavor.
- Change up the veggies to what you have on hand. If using frozen vegetables, cook them first.
- Use rotisserie chicken to save time.
- Replace Ritz crackers with Goldfish, Club crackers, potato chips, or saltines (flavor and texture will vary).
- Use canned chicken if needed (about 24 oz, drained).

Serving Suggestions
This Ritzy Chicken Casserole can be served on its own, but it also pairs well with a few simple sides:
- Roasted or steamed veggies like asparagus, green beans, or broccoli
- Fresh salads for a lighter balance
- Garlic bread or buttery bread machine rolls to soak up the creamy sauce
For easy family meals, serve it with my Roasted Garlic Parmesan Asparagus or Cheesy Zucchini Casserole.
Storage, Make-Ahead & Reheating
- Make Ahead: Assemble the casserole up to 24 hours in advance, cover tightly, and refrigerate until ready to bake. Add 5-10 minutes to the bake time if baking straight from the fridge.
- Refrigerator– Let the casserole cool completely, then store leftovers in an airtight container for up to 4 days.
- Freezer– Transfer cooled leftovers to a freezer-safe container and freeze for up to 3 months.
- Reheating– Thaw overnight in the refrigerator if frozen. Reheat in the oven for best results, or microwave individual portions if needed. Oven reheating helps keep the Ritz cracker topping crisp.

This was absolutely delicious. Made it exactly as written. Don’t be tempted to use more salt, there’s enough already in there. Because we are only 2, I divided it between two casserole dishes & froze one before cooking. Everything in it is cooked already. Husband said “this is a keeper!”
