    This festive recipe for Christmas Cornflake Brittle is the perfect Holiday treat. Crunchy cornflakes and sweet caramel combine to create a delicious and easy to make dessert. Crispy, chewy, and only 10-15 minutes of prep time needed!

    Have you seen this recipe floating around on Tik Tok? Sure, I have heard of Peanut Brittle, but never had I heard of Cornflake Brittle. When I watched a few of the videos, I knew I had to try it for myself. Also referred to a crack brittle, this salty-sweet treat is a new family favorite and one we will most definitely be adding into our Christmas rotation!

    Ingredients Needed for Cornflake Candy

    Below is a brief overview of each ingredient needed. To see printable recipe card with exact amounts, scroll to the bottom of this post.

    • Cornflakes– this is the base and provides the crunchy texture. Any brand works, I like to use store brand as I can usually find it much cheaper.
    • Butter– salted butter is my go to to get that perfect salty sweet blend. If using unsalted butter, simply add a pinch of salt into the mixture.
    • Brown Sugar– light brown sugar adds the sweetness throughout.
    • Almond Bark– I use chocolate almond bark, however, you can also use chocolate chips if you can’t find almond bark at your grocery store.
    • Candy Melts– red and green candy melts add to the festive colors throughout.
    • Sprinkles– optional, but if making this candy for the Holiday season, use green, red, or a Christmas blend to dress it up.

    How to make Christmas Cornflake Brittle

    1. Preheat the oven to 350 degrees. Line a sheet pan/jelly roll pan with parchment paper and set aside.
    2. In a large mixing bowl place your cornflakes.
    3. In a medium saucepan over medium heat add the butter and brown sugar.
    4. Cook for about 2 minutes until the butter melts and comes to a boil. Let bubble for 1-2 minutes.
    5. Immediately pour over the cornflakes. Stir until all the cornflakes are coated.
    6. Spread the coated cornflakes evenly onto the lined baking tray.
    7. Bake in preheated oven for 12-15 minutes until just golden brown.
    8. In a small bowl in 30 second intervals, melt the chocolate almond bark until melted and smooth. Spread over the brittle.
    9. In a microwave safe bowl melt the red candy melts in 30 second intervals until smooth and melted. Repeat with the green candy melts.
    10. Drizzle the red and green melted chocolate over the brittle and swirl gently with a knife. Top with sprinkles if desired.
    11. Let cool completely and break into pieces. Serve!

    Cornflake Brittle Tips and Tricks

    Here are some simple tips to ensure success each and every time!

    • Any size baking sheet works, just note the bigger it is, the thinner spread the corn flake candy will be. We use all different sizes depending on what we have readily on hand, so if you want it thicker, use a small baking tray. Thinner, use a larger baking sheet.
    • Brittle is finicky and you may want to use a candy thermometer to make sure the caramel mixture doesn’t get too hot. If using a candy thermometer, you will want the mixture to get to 300 degrees F.
    • Feel free to change up the chocolate used if you desire. Almond bark is my favorite since it isn’t too sweet, however, white chocolate chips, milk chocolate chips, dark chocolate chunks, etc. all work great.
    • Candy melts can be omitted or changed colors to fit the occasion. The candy is delicious when paired with chocolate, however, it isn’t required.
    • Nuts and/or Flaky Sea Salt are an extra indulgent touch to the top.

    Storing Leftover Christmas Cornflake Brittle

    If you’re lucky enough to have leftover cornflake “crack brittle”, here are some tips to ensure freshness:

    • Room Temperature: store in an airtight container for up to 2 weeks. I don’t recommend placing in the fridge as the brittle tends to get soft.
    • Freezer: once fully cooled, place in a freezer safe container up to 3 months. When ready to serve, let it thaw for at least one hour at room temperature.

    Easy Christmas Cornflake Brittle

    Ingredients
      

    • 3 cups cornflakes
    • ½ cup butter
    • ½ cup brown sugar
    • ½ lb chocolate almond bark
    • ½ cup red candy melts
    • ½ cup green candy melts
    • Christmas sprinkles *optional

    Instructions
     

    • Preheat oven to 350 degrees F and line and baking sheet with parchment paper. Set aside.
    • In a large mixing bowl, place your cornflakes.
    • In a saucepan over medium heat, add the butter and brown sugar. Cook for about 2 minutes, or until the butter melts and the mixture comes to a simmer. Let the mixture bubble for about 2 minutes.
    • Immediately pour the mixture on top of the cornflake cereal. Stir until all is coated evenly.
    • Spread the coated cereal evenly onto the prepared baking sheet.
    • Bake in oven for about 12-15 minutes, or until just starting to get golden brown in color.
    • In a microwave safe bowl, melt the chocolate almond bark in 30 second increments until smooth and creamy.
    • Spread over the brittle.
    • In a separate microwave safe bowl, melt the red candy melts until smooth and creamy. Repeat with the green candy melts in another bowl.
    • Drizzle the red and green melted chocolate over the brittle and gently swirl with a knife. Add sprinkles if desired and let cool completely.
    • Break into small pieces and serve!
