Avalanche Cookies are a no-bake dessert inspired by the famous Avalanche Bark from the Rocky Mountain Chocolate Factory. Instead of a bark, this version is scooped into bite-sized cookie form. They’re made with a melty mix of white chocolate and peanut butter, then stirred together with Rice Krispies, mini marshmallows, and mini chocolate chips. Each cookie is soft, chewy, crunchy, and sweet with the perfect balance of textures—and they store beautifully, too!

- White Chocolate Chips– for the best flavor, use high quality such as Ghiradelli’s. If preferred, you can also use white almond bark in place of the chocolate chips.
- Creamy Peanut Butter– Skippy or Jif, not the natural kind.
- Rice Krispie Cereal– Any brand of crispy rice cereal will do. For gluten-free, try Malt-O-Meal®.
- Miniature Marshmallows– Make sure they’re fresh and soft! This binds everything together perfectly.
- Mini Chocolate Chips– I use semi-sweet miniature chocolate chips, however, you can also use milk chocolate or dark chocolate. PRO TIP: using frozen chocolate chips prevents them from melting once combined with the warm peanut butter mixture.
Variations & Add-In Ideas
There’s no avalanche too big for these cookies to handle! Try these fun twists:
- Chocolate Swap: Instead of white chocolate chips, you can use almond bark, milk chocolate almond bark, or candy melts.
- Add-Ins: Stir in up to ½ cup of other ingredients such as chopped Reese peanut butter cups, nuts, shredded coconut, almonds, M & M’s, or toffee bits. If you use a chocolate product, such as peanut butter cups, freeze them first so they don’t melt.
- Toppings: Top your cookies with chopped peanuts or festive sprinkles for a different look and flavor. You can also melt colored chocolate and drizzle it on.
How to make this Avalanche Cookie Recipe
Melt: In a microwave-safe bowl, melt white chocolate chips and peanut butter in 30-second intervals, stirring in between, until smooth.
Mix: In a large bowl, combine Rice Krispies, marshmallows, and half the chocolate chips.
Combine: Let the melted mixture cool slightly, then pour it over the cereal mixture. Gently stir until everything is coated.
Scoop: Add remaining chocolate chips. Drop by large spoonfuls onto a parchment-lined baking sheet or silicone baking mat. Use a cookie scoop for even sizing.
Chill: Refrigerate for 1 hour to firm up. Store leftovers in an airtight container for up to a week.

No Bake Avalanche Cookies Recipe
Ingredients
- 12 oz white chocolate chips
- ⅔ cup creamy peanut butter
- 2 cups rice krispies cereal
- 1 ½ cups mini marshmallows
- ⅓ cup mini chocolate chips
Instructions
- Add the white chocolate chips and peanut butter to a microwave safe bowl. Heat on 30 second increments, stirring well in between, until melted.
- Add the rice Krispie cereal, mini marshmallows, and half of the chocolate chips to a large bowl. Once the chocolate and peanut butter mixture have cooled, pour into the mixing bowl.
- Toss everything together until the ingredients are well coated and the chocolate is evenly distributed.
- Add remaining chocolate chips. Drop this mixture by large spoonfuls onto a parchment lined cookie sheet.
- Move the cookies to the refrigerator to chill for 1 hour. Serve and enjoy!
