What is a bratwurst?
First and foremost, if you don’t know what a bratwurst is, I should probably clarify that before we get too far into the recipe. Bratwursts are a type of German sausage made from pork, beef, or veal. Pork is the most common meat used, combined with a variety of herbs and spices before being stuffed into a casing. A bit sturdier than a hot dog, bratwurst can be grilled, smoked, baked in the oven, or simmered in beer until cooked. Serve in a hot dog bun or on its own with your favorite toppings, such as ketchup, mustard, relish, onions, and more!

- Bratwurst Sausages: Use 8 raw bratwurst sausages. I use Johnsonville brats for this recipe, but any brand works!
- Onion: You’ll want to thinly slice one large yellow or white onion.
- Garlic: Fresh minced garlic is best, although jarred works great too.
- Beer: You’ll need 12 ounces of your favorite beer. If you don’t want to use beer, chicken broth or beef broth works too.
- Olive Oil: Used to sauté the onions and garlic and brown the bratwurst in the skillet.
- Salt/Pepper: Season to taste.
- Brioche Rolls: Optional! Serve the brats in rolls or enjoy them on their own.
- Toppings: Have fun with this part! Ketchup, mustard, Dijon mustard, bell peppers, relish, pickles, onions, sauerkraut, and more.
How to Make Oven Beer Brats

Step 1: Preheat oven to 400°F. In a large skillet (I use a cast iron skillet), heat the olive oil over medium-high heat. Add in the thinly sliced onions and minced garlic. Sauté for about 5 minutes, or until softened and golden brown.

Step 2: Push the onions and garlic to the side of your skillet and add in the bratwurst sausages. Brown on all sides for about 5 minutes total. Pour in the beer, enough to cover the sausages about halfway. Bring to a simmer and cook for about 5 minutes.

Step 3: Transfer the brats and onions to a baking dish, pouring the beer mixture evenly over them. Season with salt and pepper as desired. Place the baking dish into the preheated oven and bake for about 20 minutes, or until the brats are browned and reach an internal temperature of 160°F.

Step 4: Serve in brioche rolls with your favorite toppings, or enjoy on their own. Enjoy!
Tips for Success
- Check for doneness: Use a meat thermometer to check the internal temperature of the brats. They should reach 160°F before serving.
- Let them rest: Allow the brats to rest in the baking dish for a few minutes after cooking. This helps keep them juicy and tender.
- Don’t overcrowd: Arrange the brats in a single layer with a little space between each one so they can brown evenly.
- Use tongs: When browning the bratwurst, use tongs to turn the sausages without piercing the casings. This helps keep the juices inside.
Serving Suggestions
You really can’t go wrong with whatever you choose to serve these with! Some of our favorite go-to sides are summer classics such as BEST EVER Macaroni and Cheese, Easy BBQ Baked Beans, Smoked Deviled Eggs, Italian Pasta Salad, corn on the cob, and Mexican Street Corn Coleslaw. For something even simpler, serve with potato chips and your favorite condiments!
If you want to keep things a bit more in line with German cuisine, I would recommend German potato salad, cucumber salad, potato pancakes, spaetzle, or fried cabbage!

Storage & Reheating
- Refrigerator: Allow leftover brats to cool slightly before placing them in an airtight container in the refrigerator for up to 3-4 days.
- Freezer: Place cooled brats in a freezer-safe container or bag for up to 3 months.
- Reheating: Warm the brats in a skillet over medium heat for a few minutes, or place them in the air fryer at 350°F for about 5-10 minutes, until heated through.

Oven Beer Brats Recipe FAQs
A light lager or pilsner works great because it adds flavor without overpowering the sausages. I recommend avoiding really hoppy beers, such as IPAs, since they can make the finished dish taste bitter.
Nope! There’s no need to poke holes in the sausages before cooking. Keeping the casings intact helps hold in the juices so the brats stay nice and tender.

Kristin Hayes says
We love making these during cold months when we want our brat fix, but don’t want to stand outside grilling!
Fran says
can you just leave the brats in the cast iron pan and put that in the oven instead of dirtying another dish
Kristin says
Absolutely! You only need to switch pans if the original pan isn’t oven safe. Using cast iron allows you to use only one pan though! Enjoy!
