After that, the slow cooker does all the work and you have a comforting meal ready come dinnertime! Using only 7 simple ingredients, this tried and true recipe is perfect to add to your weekly meal plan! Add a vegetable as a side dish and you have a complete meal!

- Beef– my go-to for this recipe is beef stew meat because it comes packaged, chopped, and ready to go. If you want to use another cut of beef, you can use beef chuck roast, round roast, or even top sirloin steak.
- Salt/ Black Pepper– you’ll season to taste. Feel free to use seasoned salt, bay leaf, or additional seasonings such as Italian seasoning, thyme, Basil, rosemary, or all-purpose seasoning.
- Beef Broth– I use low sodium beef broth to control the salt count a bit.
- Dry Onion Soup Mix– any brand works, this is typically sold in packets at your grocery store and includes dehydrated onions and spices. This gives the slow cooker recipe it’s flavor.
- Worcestershire Sauce– a little goes a long way, but this ingredient may just be my favorite addition.
- Garlic– freshly minced is best, feel free to increase or decrease amount depending on preference.
- Cornstarch– you will use this to create a cornstarch slurry that will thicken up the gravy perfectly.
Variations and Substitutions
- Spicy: to make this meal with a bit more heat, add in some red pepper flakes or Chipotle pepper seasoning. You can even add a splash or two of hot sauce.
- Veggies: want to make this a complete meal? Add in some baby carrots, green beans, mushrooms, or even small potatoes about halfway through the cook time.
- Gluten Free: this meal is naturally gluten free as long as you use ingredients marked gluten free. The onion mix and broth are typically gluten free, just check packaging to make sure.
- Sear: for added flavor, I always recommend searing your meat in a large skillet over medium high heat. Use some olive oil and cook each side until browned. Remove and add to your slow cooker. This method adds more flavor and really enhances the texture once cooked through.
How to make Crock Pot Beef Tips and Gravy
- Add– place beef on bottom of slow cooker.
- Season– salt and pepper the meat as desired and add in the onion soup mix, garlic, and Worcestershire sauce. Pour 3 cups beef broth around meat and cover crockpot with lid.
- Cook– low for about 5-6 hours or high for about 3-4 hours (try to cook on low if time allows as this makes the meat most tender). Combine cornstarch with ⅔ cup of liquid from crockpot in small bowl and pour mixture into thicken gravy up during last hour of cook time.
- Serve– scoop beef tips over mashed potatoes, rice, or pasta. They can also be served over vegetables if you don’t want to eat starch or carbs.
Serving Suggestions
My family prefers serving our dinner over mashed potatoes. In fact, my Instant Pot Mashed Potatoes are our go-to because I can have them ready to go in no time and it keeps dinner simple and quick. My youngest child loves to scoop beef tips and serve over rice. Even cauliflower rice makes a great option. If you want to use pasta, egg noodles are a great choice because they are inexpensive, cook quickly, and hold up well with the gravy on top. If you’re a bread lover like my family, I also suggest adding a side of Buttery Bread Machine Rolls (think Texas Roadhouse) or homemade garlic bread.

Once fully cooled, store leftovers in an airtight storage container in your fridge for up to 4 days. You can also freeze the beef tips in a freezer safe airtight container up to 3 months. Be sure to thaw before reheating.
What is the best way to reheat beef tips?
Warm up any leftovers in a skillet on the stove over medium-low heat until heated through. If the gravy thickens too much, add a tablespoon water or beef broth to thin it out before reheating. This helps prevent the beef from drying out. You can also reheat in the microwave using 30 second increments until heated through.

You want the meat to have time to break down the connective tissues within, resulting in tender, fall apart meat. To allow this, low is best, however, if time doesn’t allow, high works as well!

Slow Cooker Beef Tips and Gravy
Ingredients
- 2-3 lb beef stew meat
- salt/ black pepper to taste
- 3 cups beef broth
- 1 packet dry onion soup mix
- 1 tablespoon Worcestershire sauce
- 2 cloves garlic minced
- 3 tablespoon cornstarch
Instructions
- To your crock-pot, add the beef (trimmed, with any extra fatty pieces removed).
- Salt and pepper the beef to taste.
- Add in the onion soup mix, garlic, and Worcestershire sauce.
- Pour in the beef broth and cover slow cooker with lid.
- Cook on low for 5-6 hours or high for 3-4 hours.
- For the last hour of cooking, take the cornstarch, and add about ⅔ cup of the liquid from the crock pot. Use a fork to combine until smooth. Pour this back into the crock-pot for the last hour of cooking to thicken the sauce.
- Serve over egg noodles, rice, or potatoes! Enjoy!
