- Butter– unsalted, you’ll melt this and combine it with the chicken stuffing to combine with the chicken mixture and use as the topping

- Onion– chopped, if you don’t have an onion on hand, you can use onion powder as well, I love using yellow onion in this recipe, however, use whatever you have on hand
- Chicken– cooked and shredded, feel free to use Rotisserie chicken to save on time
- Cream of Chicken Soup– if you don’t want to use canned cream of chicken soup, you can also increase sour cream to offset omitting this or make homemade. You can also use cream of mushroom, celery, etc.
- Sour Cream– I use low fat to save a bit on the calories, however, any type works. This combines with the other ingredients to create the creaminess

- Combine the melted butter and stuffing package together in a large mixing bowl.
- Scoop 1 cup of stuffing mixture out of bowl and set aside. This will be the topping used later.
- In same bowl as remaining stuffing mixture, add in the zucchini, onion, cooked chicken, cream of chicken soup, and one cup sour cream.
- Spread mixture into a greased 9×13 baking dish.
- Sprinkle reserved 1/2 cup stuffing on top evenly.
- Place pan in preheated oven, 350 degrees, and bake about 45 minutes. Remove from oven and serve!

I haven’t personally tried it yet, but it should work great. Assemble the casserole as directed in recipe and cook on low for up to 4 hours and high for about 2 hours. Scoop and serve!

Looking at recipe I hesitate to try recipes that say 1 onion, 4 zucchini. They come in many sizes. Cup measurements would be much better..

Great suggestion, thanks! I use about 1 medium onion and 4 medium zucchinis in the recipe, but the size of them doesn’t matter. If yours are bigger or smaller, it still works great! Enjoy!

I will definitely make this again. I used chicken stuffing from Aldi as we prefer this to stove top. I might microwave the zucchini next time just to soften a wee bit. The crunch was good though. I did make it in a 8 x 10 pan so baked a little longer. Flavor was fantastic with ingredients listed, did get a rotisserie chicken for easy preparing. Very good.
