I love potatoes but it hadn’t always been that way. These little guys had to grow on me haha. I mean it could have been a mind thing, but to me they tasted really earthy. Like I could taste the soil they were grown in , if that makes any sense. It wasn’t till I started boiling them in chicken broth, that I really started enjoying them. This recipe is definitely not for those healthy at heart, but it is very good.
Ingredients:
8 red potatoes cut in fourths
6 cups of water
1 chicken bouillon cube
2 tablespoons of butter
1/4 cup of mild cheddar cheese shredded
Salt and pepper to taste
*I had some fresh rosemary on hand as well and have added it to this recipe, also tastes pretty delish!
Place the water in a pot and bring to a boil. Add Potatoes and chicken bouillon cube. Boil until potatoes are tender, about 10 minutes. Drain water, place potatoes back in pot over medium heat, add butter and cheese. Mix it all up. Add salt and pepper if needed. Enjoy!

I love potatoes so I have to be careful how often I serve them. My family will go nuts over eating them. lol This is a sidedish they’d love.
I haven’t used chicken stock to cook the potatoes but I’ll remember to do that. I only started using it for cooking rice and the quinoa recently. Now that I make my own I’m not afraid to use it in everything 🙂
