Easy Mexican Tortilla Rollups
These Rollups are so incredibly easy to throw together and are perfect for parties, gatherings, snacks, or a quick on the go meal option! You can prepare them in advance and simply pull them out when ready to serve!

About these Mexican Burrito Roll Ups
Flavor: combining cream cheese, refried beans, and diced green chiles, these have a creamy, Mexican inspired flavor throughout.
Consistency and Texture: since these get refrigerated until ready to serve, you notice a chewy tortilla, with a creamy filled center. Slightly firm until you bite into them and then they melt in your mouth.

- Refried Beans
- Green Chiles– diced
- Cream Cheese– make sure its softened so it easily blends together with the ingredients
- Tortillas– burrito sized, flour
Variations
- Use diced jalapeno in place of the green chiles for an added kick
- Add in some ground beef or turkey to make these a full meal
- Add in 1 cup cheddar cheese to the bean mixture for an added cheesy addition
- Chopped Green Onions
- Add 1 tablespoon taco seasoning into the mixture for an added burst of flavor
How to make Tortilla Roll Ups
- Blend the refried beans, chilies and cream cheese together until smooth.
- Spread mixture on the tortillas and then roll up, jelly roll style.
- Refrigerate until almost time to serve. Minimum of 2 hours if possible.
- Slice into 1/2 inch pinwheels and serve with salsa (optional).
Recipe Tips and Storage
- Allow these to chill for at least 2 hours. This gives the cheesy mixture time to soften the tortillas.
- Using burrito sized tortillas, you’ll get about 30 pinwheels per batch. Adjust recipe accordingly depending on how many you need.
- You can make these up to 3 day in advance as long as they are stored in the refrigerator covered.
- Once covered and refrigerated, they are good for up to 6 days.
- These freeze perfectly. Wrap them in plastic wrap and place in freezer. They are good up to 2 months. Allow to thaw before serving.
- Slice these just before serving as they will dry out a bit once sliced, but stay perfectly moist until then.

To get it smooth and creamy, you should blend it. However, if you let the cream cheese soften, you can mix by hand or with an electric mixer. Enjoy!
