Mom’s Burrito Roll Ups are bite-size Mexican Tortilla Rollups perfect for an easy appetizer to share at a party. Roll up, refrigerate, slice and serve with salsa!
For many years, my mom made these anytime we had guests over, parties, or at the Holidays. In fact, I remember sneaking a few roll ups as a kid from the trays as they refrigerated prior to parties.
I would watch my mom put these together and it was always a quick and simple process, but fun to watch as a stuffed burrito became the bite sized slices everyone enjoyed.
Whether you enjoy these as an appetizer, or eat a few as a snack…these burrito roll ups are perfect for any occasion.
This original recipe is vegetarian, meaning no meat needed. However, if you want to add in some cooked, crumbled beef or shredded chicken…that is a great alternative! Use some taco seasoning on the beef or chicken for an added burst of flavor!
Ingredients Needed for Mom’s Burrito Roll Ups:
Refried beans
Diced green chilies
Cream cheese
Burrito sized flour tortillas
Salsa (for dipping) *optional
How to prepare:
Blend the re-fried beans, chilies and cream cheese together until smooth.
Spread mixture on the tortillas and then roll up, jelly roll style.
Refrigerate until almost time to serve.
Cut into 1/2 inch sections and serve with salsa.
Serve and enjoy!

- 4 oz diced green chiles
- 8 oz cream cheese
- 1 package Burrito size tortillas
- salsa
Instructions
- Blend the refried beans, chilies and cream cheese together until smooth.

- Refrigerate until almost time to serve. Minimum 30 minutes.
- Cut into 1/2 inch sections and serve with salsa. Enjoy!
