    Easy Mexican Tortilla Rollups

These Rollups are so incredibly easy to throw together and are perfect for parties, gatherings, snacks, or a quick on the go meal option! You can prepare them in advance and simply pull them out when ready to serve!

Perfectly portioned and full of creamy, cheesy goodness in every bite, these will be a favorite with everyone!

I LOVE appetizers! In fact, I could easily make a meal out of appetizers alone because of all the variations! From these roll ups, to easy layered nacho dip, chicken bacon ranch sliders, taco pizza rolls, and more!

About these Mexican Burrito Roll Ups

Flavor: combining cream cheese, refried beans, and diced green chiles, these have a creamy, Mexican inspired flavor throughout.

Consistency and Texture: since these get refrigerated until ready to serve, you notice a chewy tortilla, with a creamy filled center. Slightly firm until you bite into them and then they melt in your mouth.

    2. Spread mixture on the tortillas and then roll up, jelly roll style.

    Recipe Tips and Storage

    • Allow these to chill for at least 2 hours. This gives the cheesy mixture time to soften the tortillas.
    • Using burrito sized tortillas, you’ll get about 30 pinwheels per batch. Adjust recipe accordingly depending on how many you need.
    • You can make these up to 3 day in advance as long as they are stored in the refrigerator covered.
    • Once covered and refrigerated, they are good for up to 6 days.
    • These freeze perfectly. Wrap them in plastic wrap and place in freezer. They are good up to 2 months. Allow to thaw before serving.
    • Slice these just before serving as they will dry out a bit once sliced, but stay perfectly moist until then.

    Frequently Asked Questions

How can I make these Burrito Roll Ups more filling?

You can add in shredded chicken, beef, or turkey in addition the cheesy bean mixture to make this more substantial.

Will these get soggy if I make them ahead of time?

Nope! Due to the fact there are no wet ingredients in this recipe, these roll ups won’t get mushy and soggy,

What can I serve these Mexican Tortilla Rollups with?

These are great when enjoyed on their own, but to add some more flavor, you can serve them with some fresh salsa, restaurant-style tableside guacamole, or even Easy White Queso! You can even make a Taco Lasagna and have these as an appetizer, or make some Restaurant-Style Mexican Rice for a perfect pair!

What tortillas are best for this recipe?

Stick with flour tortillas as corn break too easily. I love using the burrito size because they hold all the filling and roll up perfectly.

Do you need to actually put all ingredients in a blender or can you just hand mix everything together ? Looks amazing I can’t wait to try

To get it smooth and creamy, you should blend it. However, if you let the cream cheese soften, you can mix by hand or with an electric mixer. Enjoy!

Are you heating up the refried beans before you mix with everything?

Will the green chilies make it hot or just spicy???

The green chiles just add more flavor. These are not spicy/hot : )

I think you could use shredded beef if you needed some meat. That would be easier to roll and cut.

Yes! Shredded beef would be easier to use in these than ground beef! Yum!! 🙂

I am not positive on the calorie count but I believe it is around 200 calories per serving (3 roll ups) 🙂

Will adding ground beef to this mess it up?

Hmmm, I would have to say not to add the ground beef as it would change the texture, consistency, and overall taste. It would make it harder to roll up perfectly before slicing. 😉
