    What is a bratwurst?

First and foremost, if you don’t know what a bratwurst is, I should probably clarify that before we get too far into the recipe. Bratwursts are a type of German sausage made from pork, beef, or veal. Pork is the most common meat used and it is combined with a variation of herbs and spices before being stuffed into a casing. A bit more sturdier then a hot dog, you then grill, smoke, oven bake, or beer boil until cooked. Served in a hot dog bun or on its own, you can add any desired toppings from ketchup, to mustard, relish, onions, and more!

Why You’ll Love this Beer Brats Oven recipe

    • Convenient– using the oven, this hands free method allows you to move on with side dishes while these cook.
    • Juicy and Tender– since the heat evenly circulates throughout the oven, these are crispy on the outside and perfectly juicy, tender on the inside.
    • Flavorful– whether you enjoy on their own, or load up on toppings, these are customizable and flavor packed!
    • Quick and easy– once seared and assembled, simply place the brats in a baking dish and toss into the oven. Minimal effort required!

Ingredient Notes for Oven Roasted Beer Brats

Using only a few simple ingredients, these are oven ready in no time! See printable recipe card at the bottom of this post for exact ingredient amounts and step by step directions.

    • Bratwurst Sausages– any type desired, I use Johnsonville brats.
    • Onion– you’ll want to thinly slice and large yellow or white onion.
    • Garlic– fresh minced is best although jarred works great too.
    • Beer– you’ll need 12 ounces of your favorite beer for this recipe. if you don’t want to use beer, chicken broth or beef broth work too.
    • Olive Oil– this is used to heat in the skillet to saute everything.
    • Salt/Pepper– season to taste.
    • Brioche Roll– optional, you’ll use these if creating sandwiches. If you choose to serve on their own, feel free to omit the bread.
    • Toppings– have fun with this part. Ketchup, mustard, bell peppers, Dijon, relish, pickles, onion, sauerkraut, etc.

all the ingredients needed to make oven roasted brats.

How to cook Beer Brats in the oven

    1. Preheat oven to 400 degrees F.
    2. In a large skillet (I use a cast iron skillet), heat the olive oil over medium-high heat, Add in the thinly sliced onions and minced garlic. Saute for about 5 minutes, or until golden brown and softened.
    3. Push the onions and garlic to the side of your skillet and add in the bratwurst sausages. Brown them on all sides for about 5 minutes total.
    4. Pour in your beer, enough to cover sausages about halfway. Allow to come to a simmer, about 5 minutes.
    5. Transfer the brats and onions to a baking dish, pouring the beer mixture over them evenly.
    6. Season with salt and pepper as desired.
    7. Place baking dish into preheated oven and cook brats for about 20 minutes, or until cooked through and browned.
    8. Serve in rolls with toppings. Enjoy!

step by step on how to make oven beer brats.

What to serve with Oven Brats

You really can’t go wrong with whatever you choose to serve these with! Some of our favorite go-to sides are summer classics such as potato salad, macaroni and cheese, baked beans, deviled eggs, pasta salad, corn on the cob, and coleslaw.

If you want to keep things a bit more in line with German cuisine, I would recommend a German Potato Salad, cucumber salad, potato pancakes, spaetzle, or fried cabbage!

    Tips for Success

    • When cooking brats, use a meat thermometer to check if done. The internal temperature should reach 160 degrees.
    • Allow the brats to rest for a few minutes once cooked and in the dish still. This really allows them to keep their juicy textures.
    • Spread the brats out a bit rather than having them touch so they get perfectly crispy all the way around.

    Storing this Beer Brats Recipe

    • Allow leftovers to fully cool before placing into an airtight container in the refrigerator up to 5 days.
    • If freezing, place in a freezer safe container or bag up to 3 months.
    • To reheat: cook in a skillet over medium heat for a few minutes, or place them in the air fryer at 350 degrees for about 5-10 minutes.

can you just leave the brats in the cast iron pan and put that in the oven instead of dirtying another dish

Absolutely! You only need to switch pans if the original pan isn’t oven safe. Using cast iron allows you to use only one pan though! Enjoy!
