Peanut Butter Brownie Bites
If you love chocolate and peanut butter and especially love brownies, then you’ll most definitely want to try these Peanut Butter Brownie Bites! With a fudge like brownie cup, rich and creamy peanut butter center, and melted chocolate chips throughout, you can’t go wrong!
Though these bites may be little, they certainly hold their own! The perfect dessert to serve when company comes over, at a party or picnic, or simply when that sweet tooth craving hits! They store perfectly, are easy to transport, and are perfectly delicious with each and every bite!

Ingredients Needed:

- Sugar
- Butter- softened
- Water
- Semisweet Chocolate Chips
- Egg
- Vanilla Extract- try to use pure versus imitation
- Flour- all-purpose
- Baking Soda
- Milk Chocolate Chips- feel free to use semi-sweet if desired
- Creamy Peanut Butter- Creamy sweetened peanut butter works best
How to make Chocolate Peanut Butter Brownie Bites
- In a microwaveable safe bowl, combine the sugar, butter, and water. Microwave in 45 second increments until butter is melted.
- Add in the 1 cup chocolate chips (semisweet) and stir until melted. *If not melting entirely, stick back into microwave for a few seconds. Stir mixture until completely combined.
- Add in the egg and vanilla extract. Mix in the flour and baking soda.
- Allow batter to cool off slightly, for about 5-10 minutes.
- Fold in the milk chocolate chips. Grease or line a muffin tray and fill each tin with batter, about ¾ full.
- Place muffin tray in a preheated oven, 350 degrees, and bake for 14-16 minutes.
- Once brownie cups are baked, remove from oven and allow to cool off for about 5 minutes.
- If brownie centers do not cave in when cooling, use a tablespoon and gently press into the middle of each cup creating a small divot.
- Microwave the peanut butter until creamy and melted. Pour about 1 tablespoon peanut butter into each brownie cup center. Top with additional chocolate chips if desired.
Tips and Tricks
- Do not over-mix the brownie batter. If you like your brownie bites fudgy, mix until the ingredients are just combined. The more you stir, the more cakey the finished brownies will be.
- Be sure to thoroughly grease muffin tin to ensure the brownies don’t stick.
- Feel free to use a brownie mix in place of the homemade brownies for an added shortcut.
- Chopped Reese’s can be used in place of the chocolate chips in the center!
- Feel free to make these in a pan as well and cut into pieces versus muffin bites.
How to store
These bites are best enjoyed within a day or two of making. Refrigerate leftovers in an airtight container for up to 5 days, and then allow time for the brownie bites to stand at room temperature (about 30 minutes or so) before eating, so the brownies aren’t too hard.
To freeze, allow brownies to cool completely before placing in a freezer safe container. Freeze for up to 3 months. Thaw before enjoying!

I made these on Thursday and they are delicious. I think I may have baked them a little too long though as they got a little too hard after sitting a few hours. I tested with a toothpick, it came out wet so I decided to leave them in about 45 seconds longer. I wish that I could have videoed my 1 year old niece when my sister was feeding these to her. OMG….she absolutely loved them! when my sister made her say please before each bite she threw her hands up in her hair and wailed around screaming I want more num num…It was to darn cute! I am making these again tomorrow for a bake sale on Sunday. I am cooking them in the mini muffin pan. Any suggestion on the cooking time for that pan size?
