Ingredient Notes
See printable recipe card at the bottom of this post for exact ingredient amounts and directions.

- Brown Sugar: this gives the bread its rich sweetness and classic flavor throughout. I typically use light brown sugar, but dark brown sugar works great too for a deeper flavor.
- Cinnamon: adds a warm flavor that pairs perfectly with the brown sugar in this quick bread recipe.
- Milk: I usually use 2% milk, but any type works. This helps keep the bread soft and moist.
- Vegetable Oil: gives the bread its moist texture. Canola oil or melted butter can also be used.
Easy Ways to Change It Up
- Nuts: stir up to ½ cup chopped pecans or walnuts into the batter before baking for a little crunch.
- Chocolate Chips: milk chocolate, semi-sweet, or even white chocolate chips make a fun addition.
- Cinnamon Sugar Topping: mix together a little cinnamon and brown sugar and sprinkle it over the batter before baking for extra flavor and a slightly crisp topping. If you love cinnamon flavors, my Cinnamon Crumble Banana Bread is another favorite!
- Mini Loaves or Muffins: this recipe works great as mini loaves or muffins if you want smaller portions or quicker bake time.
- Glaze: drizzle a simple powdered sugar glaze over the cooled bread for an extra sweet finish.
How to Make Brown Sugar Bread

Step 1. Preheat oven to 350 degrees and grease 3 mini loaf pans (or 1 large loaf pan or muffin pan). In a large mixing bowl, whisk together the brown sugar, flour, cinnamon, baking powder, and salt.

Step 2. In a small bowl, whisk together the egg, milk, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix. Pour the batter into the prepared pans, filling each about halfway full. If desired, sprinkle a little extra brown sugar on top before baking.

Step 3. Place the pans into the preheated oven and bake for about 35-40 minutes for mini loaves. If making one large loaf, bake for 50-60 minutes. Muffins will bake in about 25-30 minutes.

Step 4. Remove from the oven and allow the bread to cool slightly on a wire rack before slicing and serving. Enjoy!
Baking Tips
- Don't overmix the batter. Stir everything together until just combined to keep the bread soft and moist.
- Use the toothpick test to check for doneness. If it comes out clean when inserted into the center, the bread is ready.
- Allow the bread to cool slightly before slicing so it holds together better.
- If making muffins or mini loaves, keep an eye on bake time since they bake faster than a large loaf.
Storage & Freezing
- Store the bread in an airtight container or bag at room temperature for up to 4 days.
- For longer storage, keep it in the refrigerator for up to 1 week.
- To freeze, wrap the cooled bread tightly in plastic wrap or aluminum foil and place in a freezer bag. Freeze for up to 3 months. Allow the bread to thaw at room temperature before serving.
