Brown Sugar Bread Recipe
I don’t know about you, but I LOVE making quick breads! Not only do they come together quickly, but there are so many varieties to fit everyone’s tastes. Plus, as an added bonus, they make the house smell incredible as they bake!
This brown sugar cinnamon bread recipe is sweetened solely from the brown sugar and includes a warm addition of cinnamon throughout. Whether you make a brown sugar loaf to enjoy in the morning, or pull out later in the day, this recipe can be made into mini loaves, one large loaf, or muffins depending on what you prefer.
Brown Sugar Quick Bread Ingredient Notes

- Brown Sugar– this adds all the sweetness to the bread. I use light brown sugar in this recipe, but dark brown sugar works great too.
- Flour– all purpose flour is best, gluten free flour should also work at a 1:! ratio.
- Cinnamon– ground cinnamon gives this bread it’s warm spice and is the perfect compliment to the brown sugar flavoring.
- Baking Powder/ Salt– ensure freshness by changing out your baking powder out every 6 months as this gives the bread its rise and texture.
- Egg– you’ll want to use large eggs at room temperature as they combine easiest into the bread batter. This binds everything together.
- Milk– any type works, I use 2% milk. This provides moisture and activates the gluten in your flour.
- Vegetable Oil– this gives the bread it’s moistness, you can also use canola oil or melted butter. I have used coconut oil and wasn’t a fan of the flavor addition.
- Vanilla Extract– opt for pure vanilla extract versus imitation for the best flavor addition.
How to make quick bread
- Preheat oven to 350 degrees and grease 3 mini loaf pans (or 1 large loaf pan/muffin tray)
- In a large bowl, combine the dry ingredients (brown sugar, flour , ground cinnamon, baking powder, and salt).
- In a small bowl, combine the wet ingredients (egg, milk, vegetable oil, and vanilla).
- Combine the wet mixture into the dry mixture and stir until just combined.
- Pour the batter into the prepared pans, filling about 1/2 way.
- Sprinkle additional brown sugar on top of the pans. *optional but recommended
- Place pans into preheated oven and bake for about 35-40 minutes (mini loaves) *bake time is 50-60 minutes if large loaf, 25-30 minutes if muffins
- Remove from oven and allow to cool slightly before slicing with a sharp knife! Enjoy!
Variations
- Nuts– add up to 1/2 cup chopped pecans, almonds, or walnuts to the batter before baking.
- Raisins or dried fruit– adding about 1/2 cup into the batter such as blueberries, cranberries, or apples.
- Chocolate chips– any flavor works and adds a sweet bonus.
- Frosting or glaze– if preferred, cream cheese frosting or a powdered sugar glaze can be a nice way to top this quick bread.
- Oats– whether you sprinkle on top or stir into the batter, this is a nice, hearty addition that can help bulk the bread up.
Easy and Quick Bread Recipe Tips
- Don’t overmix your batter. Stir until all ingredients are just combined. The more you mix, the more dense and dry the bread will become, so be careful to avoid that.
- Only fill about 1/2 full as the bread will rise when baking and you don’t want the batter to spill over.
- Use the toothpick test to check whether the bread is done. If toothpick inserts and comes out clean, it is ready to remove from the oven. If there is wet batter still on the toothpick, leave the quickbread in the oven for a few more minutes.
How to store Brown Sugar Quick Bread
- Once fully cooled, you can place the bread into an airtight storage container or bag at room temperature up to 4 days.
- To refrigerate, place cooled bread in an airtight container up to 7 days.
- To freeze, wrap the bread tightly in aluminum foil, plastic wrap, or place in freezer bags, and freeze for up to 3 months. Bring to room temperature before serving.
