    Ingredients needed for Banana Pecan Muffins

    Muffins

    • Flour– this is the base of the muffin batter, you’ll want to use all purpose flour
    • Cinnamon– warming spice, adds just enough flavor to pair nicely with the bananas
    • Baking Powder/Soda/Salt– these leavening agents help the muffins to rise perfectly
    • Bananas– you’ll want to use over ripe bananas, looks for ones with lots of brown spots
    • Sugar– adds just the right amount of sweetness
    • Egg– this provides structure to the muffins and helps bind the ingredients together
    • Vanilla Extract– pure versus imitation is best
    • Butter– adds richness and moisture to the muffins, use unsalted butter

    Crunchy Nut Topping

    • Brown Sugar– the ultimate addition of warm sweetness to the topping
    • Flour– helps bind the topping together
    • Butter- use unsalted, make sure its cold as you’ll use a pastry blender to combine topping into coarse crumbs
    • Old Fashioned Oats– this really enhances the texture of the nut topping
    • Pecans– chopped

    How to make Banana Pecan Muffins

    1. Line a muffin pan with paper liners or spray with cooking spray.
    2. In a large bowl, combine the flour, cinnamon, baking powder, baking soda, and salt.
    3. In a separate bowl, combine the mashed bananas, sugar, egg, vanilla, and melted butter.
    4. Fold in dry ingredients to wet ingredients and stir until just combined.
    5. Pour batter evenly into muffin cups. *Makes about 12 muffins
    6. In a small bowl, combine the brown sugar, flour, butter, oats, and chopped pecans using a pastry blender or two forks.
    7. Sprinkle topping evenly on top of each muffin.
    8. Place muffin tray in preheated oven, 375 degrees, and bake for about 20 minutes, or until toothpick comes out clean when inserted in center. Remove tray from oven and allow to cool 3-5 minutes before removing from tin and enjoying!! Cool on a wire rack.

    Recipe Tips

    • The easiest way to mash overripe bananas is using a pastry blender. Of course, you can also use an electric mixer or two forks, but my preferred method is using a pasty blender until the desired consistency is reached.
    • To bring even more flavor to the topping, try toasting your pecans in the oven.
    • Be sure not to over-bake these muffins as they will end up dry instead of moist and fluffy. Use a toothpick to test the center of muffin. Once it comes out clean, your muffins are ready to be removed from the oven.
    • Try to make sure your eggs are at room temperature as this helps them to combine into the batter easily.
    • Feel free to add in about 1 cup chocolate chips for a chocolate addition!

    Is it possible to have too ripe of bananas to use?

    Nope, unless your bananas are moldy, they are good to use! If the skin is black, no worries, they’ll just be extra sweet!

    Sure! Allow the frozen bananas to thaw so that you can drain any excess liquid and mash them up, but freezing bananas is a great way to save them for later!

    Do I have to make the nut topping?

    Nope! If you have a nut allergy, these muffins can easily be enjoyed with or without the topping!

    Once cooled, these muffins can easily be kept at room temperature, in your refrigerator, or frozen for a later date!

    • Room Temperature: place in an airtight bag or container for up to 4 days.
    • Refrigerator: place in an airtight bag or container for up to 7 days.
    • Freezer: place in a freezer bag or container for up to 3 months.
    • Reheating Instructions: allow muffins to thaw if frozen and simply place in the microwave for a few seconds until heated through. You can also place a pad of butter on top when reheating to melt into the muffin.

      These are amazing! I made the recipe exactly as written except I used 4 ripe bananas that I wanted to use up. The muffins turned out perfect! I will definitely make these again.
