Easy Cinnamon Apple Muffins
Are you a Fall lover? I sure am! When the season approaches, I quickly pull out my flannel shirts, slipper socks, boots, and all the pumpkin decor! The house transforms into a Fall filled wonderland and I wear it proud. There is something so cozy about watching the leaves fall, the colors change, all while munching on pumpkin/apple goodies, sipping warm coffee, and enjoying a fire.
Plus, Fall means Christmas is just around the corner and that my favorite Holiday of the year!
Since we won’t jump to Christmas just yet, let’s stay in Fall and talk about these flavor packed Snickerdoodle Apple Muffins! Tender chunks of apples throughout a moist, fluffy muffin and topped with a cinnamon sugar coating. What’s not to love, right?!

Ingredients Needed for Apple Snickerdoodle Muffins
This apple muffin recipe comes together with a few baking staples and some popular fall ingredients. Check out everything you’ll need below and full recipe card is at the bottom of this post.
- Oil- Vegetable oil is my preference, but canola oil or coconut oil would also work.
- Sugar
- Eggs
- Vanilla Extract
- Buttermilk- this helps to make these muffins super light and soft.
- Apple- I use Granny Smith Apples when making these muffins. They’re sweet, crisp and will hold their shape when baking.
- Flour- all-purpose
- Baking Powder
- Salt
- Cinnamon
- Butter
How to make Apple Muffins
- Preheat oven to 350 degrees and line a muffin tray with paper or silicone liners (or cooking spray).
- Combine the oil and sugar together in a medium bowl.
- Add in the eggs, buttermilk, and vanilla extract.
- Stir in the diced apple.
- In a small bowl, combine the flour, baking powder, salt, and cinnamon.
- Combine the dry ingredients with the apple mixture and stir until just combined.
- Divide batter evenly amongst the prepared muffin tray(s), filling about 2/3 full.
- Place pan in preheated oven and bake 16-18 minutes.
- Remove from oven and place on a cooling rack.
- Combine the sugar and cinnamon together to create the topping.
- Brush the melted butter evenly on top of the muffins and dip into the cinnamon/sugar mixture. Serve immediately and enjoy!
Expert Tips
- Dice the apples. When I first made these muffins, I grated the apples. The texture was a bit off and the flavors when you bite into a bit of apple just wasn’t there. If you need to hide the apples from picky eaters, grate, otherwise make sure you dice the apples.
- Buttermilk. If you don’t have any on hand, make your own buttermilk with a simple mixture of milk and distilled vinegar or lemon juice. 1 tablespoon vinegar or lemon juice in a glass and fill the remainder to the 1 cup line. Allow to sit for 5 minutes and you have a substitute ready to go.
- Topping. I highly recommend using the brushed butter and dipping into cinnamon/sugar. However, if you are in a hurry, simply sprinkle some cinnamon/sugar on top and you are set.
What Apples to use in baking
Because there is not a long bake, any apple variety works great. Longer bakes tend to require a sturdier apple, one that will not break down due to the heat.
I love Granny Smith apples in this recipe personally, but any apples you have on hand will work great in this recipe!
How to store
Once the muffins are dipped in the topping, they are ready to devour! Store the baked muffins in an airtight container at room temperature for up to 3 days. You can also refrigerate up to 5 days.
To freeze, allow to cool completely before placing in a freezer safe container/bag. Store in freezer for up to 3 months.
Variations
- Add in pecans or walnuts for an added crunch
- Make these muffins into mini muffins. Perfect to pop into your mouth on the go
- Add a powdered sugar/water icing to drizzle on top of the muffins
- Omit the cinnamon/sugar topping for a simple apple muffin that will still be a favorite with everyone
