I came across this recipe from a friend and although its supposed to be a “light” recipe, I didnt have the low fat ingredients in my house, so this is full flavor version, hehe. It was quite full of flavor, made TONS, and was quick to whip up, so it received an A+ from my family.
24+ tortilla chips
1/2 tbsp olive oil
1 onion, chopped
2 cloves garlic, chopped
1 lb ground beef or turkey (I used turkey and it was yummy)
3 tbsp taco seasoning (or 1 1/2 packets of store packets)
1 can black beans, drained
1 cup salsa
2 cups shredded cheese (I used mexican blend)
Other toppings: sour cream, shredded lettuce, tomatoes
In a skillet, heat oil and add in garlic and onion. Saute for about 5 minutes, until soft. Add meat and taco seasoning, cooking until meat is brown. Add beans and salsa. Mix well and cook to thicken.
Line the bottom of a 9×13 baking dish. Press tortilla chips in the bottom breaking into bite sized pieces. Spread the meat mixture over the top of chips. Top with cheese, you can also add in jalapenos or green chilies. Bake uncovered at 400 for 15-20 minutes, or until cheese is melted and bubbling.
