    Crockpot Chili Frito Pie

    Crockpot Chili Frito Pie is a hearty Southwestern recipe featuring ground beef, beans, onions, tomatoes, cheddar cheese and corn chips.

    You may know this recipe as Frito Pie, Walking Tacos, and more…but this crockpot version may just go down as your new favorite method! The ground beef, beans, and other ingredients are cooked in the convenience of your slow cooker!

    The flavorful mixture is then served over Frito corn chips with your favorite toppings added on top!

    Both kids and adults go crazy over this meal because it can easily be adapted to fit anyones desires. If you prefer things with heat, add some hot sauce and jalapenos. Like things mil? Omit what you choose and make it your own!

    This meal goes down as one of my favorites due to several reasons. Its incredibly simple to make, takes only minutes to throw into the crockpot, and even my picky little eaters love this meal!

    Ingredients Needed:

    Ground Beef

    Onion

    Chili Beans

    Tomato Sauce

    Rotel

    Taco Seasoning

    Water

    Toppings of choice

    Frito corn chips

    Once you have your necessary ingredients, you are ready to get started!

    How to make Chili Frito Pie:

    Simply brown the meat with the onion, draining the fat afterwards. Add in the taco seasoning and water, allowing mixture to simmer for a few minutes. Add the beans, tomato sauce, and tomatoes to your slow cooker. Next, you’re ready to add in the meat/onion mixture! Stir to incorporate fully and place the lid on your slow cooker. Cook on high for 3-4 hours, or low and slow for about 6 hours. Once done, place fritos on the bottom of a bowl, followed by your desired amount of meat mixture. Add your favorite toppings and you’re set!

    It truly doesn’t get easier than that, am I right?!

    If you prefer to use a stove for this meal in lieu of your slow cooker, no worries! Simply brown the meat and onion as directed above. Drain the fat and add in all the ingredients minus the corn chips and toppings. Allow to simmer on low heat for about 45 minutes to an hour and serve!

    Equipment

    • Slow Cooker
    • Slow Cooker Liners
    • Cast Iron Skillet
    • Dutch Oven

    Ingredients

    • 1 1/2 lbs ground beef
    • 1 cup onion *chopped
    • 32 oz Chili Beans
    • 8 oz tomato sauce
    • 10 oz Rotel
    • 3 tablespoon taco seasoning
    • 1/2 cup water
    • toppings of choice
    • Frito corn chips

    Instructions

    • In a skillet, brown the ground beef and onion together until beef is no longer pink.
    • Drain fat.
    • Stir in the taco seasoning and water, allowing mixture to simmer over low heat for about 3-5 minutes.
    • Add chili beans, tomato sauce, and Rotel to your slow cooker.
    • Add in the ground beef mixture and stir to combine.
    • Cover slow cooker with lid and cook on low 5-6 hours or on high for about 3 hours.
    • Once ready to serve, add frito corn chips to a bowl and scoop desired amount of meat on top of chips.
    • Serve with desired toppings and enjoy!
