When I was little, my mom used to make this for our dinner, and I remember it always being one of my most favorite meals! Since I have been married, I have made it a few times, but recently forgot all about it. Since I had all the ingredients needed for it in the house already, I decided to make this for last night’s dinner. The whole family loved it, especially the kids! Not only was it a hit, but it took no time to make, and allowed me to more time to enjoy the beautiful weather instead of cooking, he-he!!
1 lb ground turkey or beef
2 tbsp chili powder
1 tbsp flour
1/2 tsp salt
1 tsp garlic powder
1 tbsp taco seasoning
1 cup water
1/2 can (about 1 cup) pinto beans, rinsed and drained
Shredded Cheddar Cheese
Chopped Tomatoes/Cilantro/Sour Cream
In a large skillet, brown the meat until no longer pink. Drain fat. Add in the chili powder, flour, salt, garlic powder, and taco seasoning. Once thoroughly mixed, slow add in the water and beans. Allow to simmer on low heat for about 10 minutes, or until most of the liquid is absorbed. Remove from heat and assemble.
To assemble: Place desired amount of corn chips on plate. Scoop meat and place on top of meat. Top with cheese, lettuce, tomatoes, cilantro, sour cream, and any other topping desired. Enjoy!!
