    Crockpot Chili Frito Pie

    Crockpot Chili Frito Pie is an easy slow cooker dinner made with lean ground beef, beans, tomatoes, and seasonings. Served over crunchy Fritos corn chips, it’s always a family favorite.

    You may know this dish as Frito Pie, Frito Chili Pie, or even a Walking Taco, but this crockpot version is my favorite way to make it. It takes just minutes to assemble, is perfect for busy weeknights, and lets everyone customize their own bowl. If your family loves simple comfort food dinners that don’t require much effort, this recipe is one you’ll want to keep on repeat.     All the ingredients needed to make crockpot frito chili pie.
    • Lean Ground Beef: I recommend using lean ground beef since it creates less grease and keeps cleanup easier.
    • Chili Beans: These add texture and make the chili extra hearty. If you can’t find chili beans, substitute a can of red kidney beans.
    • Rotel: Adds flavor and a little kick. Use mild or original depending on your preference.
    • Taco Seasoning: Gives the chili its Tex-Mex flavor. I use my Homemade Taco Seasoning, but you can use your favorite store-bought packet if preferred.
    • Fritos Corn Chips: Add just before serving so they stay crunchy.

    Easy Ways to Change It Up

    • Make it spicy: Add diced jalapenos, hot sauce, or use hot Rotel for a little extra heat.
    • Swap the protein: Ground turkey works well in place of the ground beef.
    • Customize it: Use black beans or kidney beans in place of chili beans, swap the cheddar cheese for pepper jack or a Mexican cheese blend, or serve the chili in individual bags of Fritos for a fun Walking Taco-style meal.

    How to Make Crockpot Frito Chili Pie

    Step 1. Brown the ground beef and onion together until the beef is no longer pink. Drain any excess grease.

    Step 2. Stir in the taco seasoning and water. Simmer for 3-5 minutes.

    Step 3. Add the chili beans, tomato sauce, and Rotel to your slow cooker.

    Step 4. Add the ground beef mixture to the slow cooker and stir to combine. Cover and cook on high for 3-4 hours or low for 5-6 hours.

    Step 5. Once the chili is finished cooking, give it a good stir before serving.

    Step 6. Serve over Fritos corn chips and top with your favorite toppings.

    One of the best things about this recipe is that everyone can customize their own bowl. Some of my favorite toppings include:

    • Shredded cheddar cheese
    • Sour cream

    • Hot sauce

    Cooking Tips

    • Use lean ground beef to help reduce excess grease.
    • Wait to add the Fritos corn chips until serving so they stay crunchy.
    • Leftover chili tastes even better the next day.

    Storage & Reheating

    • Store leftover chili in an airtight container in the refrigerator for up to 5 days.
    • Freeze the chili (without the Fritos and toppings) for up to 3 months. Thaw overnight in the refrigerator before reheating.
    • Reheat on the stovetop over medium heat or in the microwave until heated through.
