Inside Out S’mores Brownies

This week, Seattle had summer weather! I know, end of April, beginning of May, and already having summer weather? Nope, it was just a tease. Rain is heading our way this next week again. While we had our 85 degrees and sunny weather though, I decided to pretend it was summer. We pulled out the kids pool and sprinklers, grilled dinner, and I even made these yummy brownies! S’mores are one of my most favorite things, so when I put it into brownie form, WOW! These were great! The graham cracker was a great addition, and the marshmallows melted into the chocolate layer and was a nice, sweet tasting, layer! Whether you have Spring rain, or summer weather where you are, try these out, its summer somewhere, right?? : )


1 box brownie mix (enough to make an 8 x 8 tray) or our homemade brownie recipe
Graham Crackers
Mini Marshmallows
1 cup chocolate chips (any type desired, I used semi sweet)


Prepare brownie batter according to directions on box. *If making homemade version, make brownie batter according to directions and set aside. Prepare an 8 x 8 pan by greasing the bottom and sides. Pour half the brownie mixture into the bottom of the pan. Place graham crackers on top creating a flat layer. Break the crackers up to fit evenly. Pour about 1-2 cups of marshmallows on top of graham crackers. You may need more to create a flat, even layer of marshmallows. Sprinkle the chocolate chips onto the marshmallows. Pour remaining brownie batter on top and spread evenly. Place into a preheated oven, 350, for about 35-40 minutes, or until top is set. Remove from oven and allow to cool a minimum of 20 minutes before cutting into desired size bars. Enjoy!
