I don’t know about you, but I love a shortcut recipe that comes together easily and is packed with flavor! This Chocolate Covered Strawberry Cookie recipe is just that! Ingredients Needed to make this Chocolate Covered Strawberry Cookies Recipe

- Strawberry Cake Mix– any brand works, I love using Betty Crocker or Duncan Hines. You will need one 13.25 ounce box.
- Eggs– large eggs at room temperature are best as they combine into the cake batter easier.
- Oil– I use vegetable oil, however, canola oil works great too.
- Chocolate Melting Wafers– milk chocolate melting wafers are my go to, however, you can also use chocolate chips melted in the microwave if preferred.
- Sprinkles– if making for Valentine’s Day, opt for color themed sprinkles.
How to make Shortcut Chocolate Strawberry Cookies
- To a large mixing bowl, add the strawberry cake mix, eggs, and vegetable oil. Beat with a hand mixer or stand mixer on medium-high speed until a dough forms. Cover with plastic wrap and refrigerate for 1 hour.
- Preheat the oven to 350°F and line a large baking tray with parchment paper.
- Scoop about 2 tablespoons of dough for each cookie (or use a cookie scoop) and drop them on the lined baking sheet, leaving 2 to 3 inches of space between each.
- Bake in the oven for 10 minutes. The cookies will feel soft, but will firm up as they cool. Remove from the oven and transfer to a cooling rack. Let them cool completely.
- Heat the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Transfer to a piping bag or a storage bag with the tip cut off. Drizzle the chocolate over the cookies. Alternatively, you can drizzle it with a spoon.
- Sprinkle the Valentine’s Day sprinkles over the cookies while the chocolate is still soft.
- Let the chocolate harden before serving. Enjoy!
Tips for Success
- Don’t over-bake these cookies. You want to remove them when they are still soft, with a slight golden brown color to the edges. This will keep them chewy.
- For additional strawberry flavor, you can add 1 cup freeze dried strawberries to the cookie dough. Fresh strawberries add too much additional moisture to the dough, so you want to stick with freeze dried.
- To increase the chocolate, add 1 cup chocolate chips or chunks (dark chocolate chips are a great addition) to make this more of a strawberry chocolate chip cookie. They will have the same flavor as chocolate covered strawberries, just in cookie form.
- Use a tablespoon or cookie dough scoop to keep the cookies uniformed.
- The dough should be sticky, but firm enough to hold its shape after refrigerating.
Storing Chocolate Covered Strawberry Cookies
- Allow cookies to fully cool on a wire rack before placing in an airtight container or storage bag.
- Room Temperature– these chocolate and strawberry cookies will be good for about 4 days.
- Fridge– these cookies are good for about 6-7 days.
- Freezer– place in a freezer bag or container for up to 3 months. Thaw before enjoying.

Shortcut Chocolate Covered Strawberry Cookies
Ingredients
- 1 box strawberry cake mix 14.25 ounce size
- 2 eggs large
- 1/2 cup oil
- 7 oz milk chocolate melting wafers
- 2 tablespoon Valentine's themed sprinkles
Instructions
- To a large mixing bowl, add the strawberry cake mix, eggs, and vegetable oil. Beat with a hand mixer or stand mixer until a dough forms. Cover with plastic wrap and refrigerate for 1 hour.
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Scoop about 2 tablespoon of dough (or use a cookie scoop) for each cookie and drop onto prepared baking sheet leaving about 2-3 inches in between each cookie.
- Bake in preheated oven for about 10 minutes. Cookies should still be soft, but will have a golden brown color staring on top.
- Allow cookies to cool completely on a wire rack.
- Heat the chocolate in a microwave-safe bowl in 30 second increments, stirring until smooth and creamy. Transfer chocolate to a piping bag or Ziploc bag with the corner cut off and drizzle chocolate over the cookies. You can also use a spoon to drizzle the chocolate.
- Sprinkle the colored sprinkles over cookies while chocolate is still wet. Allow to set up and serve! Enjoy!
