Satisfy your sweet tooth with these delicious Chocolate Covered Strawberry Cookies. A perfect combination of creamy chocolate and strawberries in cookie form.
To a large mixing bowl, add the strawberry cake mix, eggs, and vegetable oil. Beat with a hand mixer or stand mixer until a dough forms. Cover with plastic wrap and refrigerate for 1 hour.
Preheat oven to 350 degrees and line a baking sheet with parchment paper.
Scoop about 2 tablespoon of dough (or use a cookie scoop) for each cookie and drop onto prepared baking sheet leaving about 2-3 inches in between each cookie.
Bake in preheated oven for about 10 minutes. Cookies should still be soft, but will have a golden brown color staring on top.
Allow cookies to cool completely on a wire rack.
Heat the chocolate in a microwave-safe bowl in 30 second increments, stirring until smooth and creamy. Transfer chocolate to a piping bag or Ziploc bag with the corner cut off and drizzle chocolate over the cookies. You can also use a spoon to drizzle the chocolate.
Sprinkle the colored sprinkles over cookies while chocolate is still wet. Allow to set up and serve! Enjoy!
