    Strawberry Pop Rock Jello Shots

    Each Christmas, my sister in law, brother, hubby, and I do a cocktail drink exchange for our gift. It is a fun way to keep the costs down, try a new drink recipe, and of course…add to your liquor collection.

    We’ve done things like Fireball Jello Shots, RumChata Hot Cocoa and Amarula Milkshakes.

    This year, my hubby and I gave them the ingredients to make RumChata Hot Cocoa and they gave us the ingredients for these Jello Shots. Now, I haven’t had Pop Rocks since I was about 1o years old, so that was a blast from the past in itself!

    I LOVE anything strawberry, so I knew these would be a hit! Plus, who doesn’t love a good Jello shot every now and then, right?!

    Last weekend, we had some friends over for dinner and I decided to make these for a fun “dessert”. Not only did we have a blast enjoying and laughing at the Pop Rocks, but the flavor was incredible. These are definitely dangerous as you cannot taste even a hint of the alcohol in them!

    With Valentine’s Day coming up, these would be a fun addition to any gathering/party you’re having! But, these would also be perfect for July 4th (great red addition to the table), or anytime of the year!

    If you don’t like Pop Rocks, simply omit from the recipe! You can use cherry Jello if desired, but I highly recommend the strawberry as the liqueur in these is strawberry flavored and may not be as tasty with cherry!

    Have fun with these Strawberry Pop Rock Jello Shots, but of course….be responsible please! These Vanilla Pudding Shots are a great option for something creamier!

    Strawberry Pop Rock Jello Shots

    Ingredients
      

    • 2 packets unflavored gelatin
    • 6 oz strawberry jello
    • ½ cup cold water
    • 1 cup hot water
    • 2 oz Kinky Red Liqeuor
    • ½ cup champagne
    • Pop Rocks, optional

    Instructions
     

    • In a small bowl, add the unflavored gelatin.
    • Add in the cold water and whisk to combine.
    • Add in the hot water and Jello, continuing to whisk.
    • Add in the liqueur and champagne. Stir.
    • Pour liquid into Jello shot cups and place in refrigerator to set up.
    • Once the Jello has set up, you can serve and pour the pop rocks on top just before enjoying!

      can I make these in advance with the pop rocks sprinkled on top?

        If making in advance, don’t add the pop rocks until just ready to serve as this keeps them fizzy and fresh! If added too early, they lose the fizz. Just the jello shots can be made ahead of time! Enjoy!

        You can, but you need to replace the champagne with some other type of liquid. I have also used Fireball in place of the champagne!
