    Coffee Cake is a favorite in my house and perfect any time of the day! Whether you use Bisquick as a shortcut option in this cake or make a homemade cinnamon streusel coffee cake, you can’t go wrong! This original recipe is one you may have noticed on the back of the yellow Bisquick box and since it came out, it has been a tried and true family favorite! Resulting in a thick, fluffy cake with a streusel topping, this shortcut recipe is oven ready in under 10 minutes!

    What is Bisquick?

    Bisquick is a pre-mixed baking mix, typically used for making quick and easy biscuits, pancakes, and waffles. It essentially combines flour, leavening agents (like baking powder), shortening, and sometimes other ingredients, making it a convenient shortcut for baking. It has been around since 1931, originally released as a biscuit mix. Since then, it is a staple in several recipes including my Bisquick Strawberry Shortcake and Chicken Cobbler Casserole!

    What makes this Bisquick Coffee Cake recipe a favorite?

    • Simple Ingredients– using pantry staples, this coffee cake from Bisquick is quick to prepare and doesn’t require any fancy ingredients. In fact, if you have guests come over last minute, this is a great option to prepare quickly.
    • An Anytime Treat– you can enjoy a piece of this baking mix coffee cake for a breakfast with morning coffee, as an afternoon snack, or evening treat. Any time of the day, this cake is just the thing to enjoy!
    • The ULTIMATE Streusel Topping– using a hearty amount of brown sugar, cinnamon, butter, and baking mix, you get a streusel topping that is thick, sweet, and the perfect addition to the fluffy cake!

    Ingredient Notes

    Below is a brief overview of each ingredient needed to make this Bisquick Cinnamon Coffee Cake. To see exact amounts with step by step directions, scroll to the bottom of this post or click the “jump to recipe” button at the top of the post.

    CAKE

    • Bisquick Mix– you can use store-bought or homemade. I like to stick with Bisquick brand name, however, store brand works too.
    • Milk– any type works including non-dairy milk options. I like to use whole milk as it adds the most moisture to the cake, but skim milk works too. Buttermilk is a great option as well.
    • Egg– one large egg at room temperature. This helps it incorporate into the batter easier.
    • White Granulated Sugar– this adds the perfect amount of sweetness to the cake base. Feel free to use a sugar substitute if desired.

    TOPPING

    • Bisquick– store-bought or homemade works great.
    • Brown Sugar– I use light brown sugar. Be sure to pack it into the measuring cup.
    • Cinnamon– ground cinnamon adds the perfect amount of warm spice throughout the topping.
    • Butter– unsalted butter is my go-to, however, salted butter works great too. Ensure its cold as you’ll use a pastry cutter to crumble it up.

    How to make Bisquick Coffee Cake

    Preheat oven to 375* and lightly grease an 8×8 baking pan. Set aside.

    In a medium bowl, mix cake ingredients (Bisquick, milk, egg, and sugar) until well blended. Spread evenly in 8×8 baking pan (can use a 9-inch pan too).

    Using a small bowl, mix the streusel topping ingredients (Bisquick, packed brown sugar, cinnamon, and butter) with a fork or pastry cutter until crumbly. Sprinkle topping evenly on top of dough and put pan into oven.

    Bake at 375* for 25-30 minutes or toothpick inserted into middle comes out clean. Serve warm or cooled….ENJOY!

    Storing Leftover Coffee Cake

    To store leftover coffee cake, allow cake to fully cool before moving to an airtight storage container. Store at room temperature for up to 2 days or store inside the fridge for up to 5 days. This coffee cake with Bisquick is best served warm, or at room temperature, so I suggest warming up a piece of cake inside the microwave  for about 20-30 seconds if the coffee cake was stored in the refrigerator. To freeze, place in a freezer safe container or bag up to 3 months. Thaw before reheating and serving.

    Can this recipe be doubled?

    Absolutely! If doubling ingredients, use a 9×13 inch prepared baking dish.

    What can I add to this cake to make it even better?

    We love adding chopped nuts or mini chocolate chips for an added sweetness. You can also use dried fruit, drizzle a powdered sugar glaze on top, or double the topping to use half as a streusel layer in the middle of the cake! So many great options! Add in 1-2 teaspoon vanilla extract to enhance the depth of flavor.

    How do I make Bisquick Coffee Cake more moist?

    If you find this coffee cake to be a bit dry, you can use buttermilk in place of the milk and make sure you don’t over-bake. This leads to the coffee cake being dry and not as moist.

    Ingredients
      

    CAKE

    • 2 cups Bisquick
    • ⅔ cup milk
    • 1 egg
    • 2 tablespoon sugar

    TOPPING

    • ⅔ cup Bisquick
    • ⅔ cup brown sugar
    • 1 teaspoon ground cinnamon
    • 4 tablespoon butter cold

    Instructions
     

    • Preheat oven to 375 degrees and grease an 8x8 baking pan. Set aside.
    • In a medium mixing bowl, combine the Bisquick, milk, egg, and sugar mixing until just combined.
    • In a separate bowl, combine the Bisquick, brown sugar, cinnamon, and cold butter using a pastry blender until crumbly mixture forms.
    • Pour cake batter into prepared pan and top with the crumbly streusel.
    • Place pan in preheated oven and bake 25-30 minutes, or until toothpick comes out clean when inserted in center of cake.
    • Remove from oven and serve warm, or allow to fully cool. Enjoy!

      Do you think that we could substitute Splenda reg and brown sugars for the regular sugars? I am a diabetic and this sounds really good but I need it to be diabetic friendly. Thank you so much. I love your recipes.
