Baked Chocolate Glazed Donuts

My husband LOVES breakfast foods! Every morning on the weekend, he wants a yummy breakfast. I, however, am the opposite. I could very easily skip, which I know is not good, or just get away with having a yogurt, etc. He is almost always put in charge of making some yummy, and of course, once I see or smell it, I typically have some and then claim that I love breakfast, hehe! Last weekend, the kids and him were in the mood for donuts. Since we have a donut pan, he decided to make them, rather than load the kids up and drag them up to the store. Let me tell ya, these donuts were AMAZING!! They were baked, so they were a bit more healthy for ya, and had so much flavor! Now, don’t think I just claimed they are healthy, because they aren’t, however, if you are comparing them to a Krispy Kreme donut or other type, yes, they are healthier. Enjoy!!

Ingredients:

1 cup flour
1/4 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar, packed
1/2 cup buttermilk
1 egg
4 tbsp unsalted butter, melted until just browned
1 tsp vanilla extract

Chocolate Glaze:

1 1/4 cup powdered sugar
3 tbsp unsweetened cocoa powder
Pinch of salt
3-4 tbsp milk
2 tsp vanilla extract
Sprinkles

Directions:

Preheat oven to 325. Grease/spray a donut tray. In a medium bowl, combine the flour, unsweetened cocoa powder, salt, and brown sugar. In a small bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Scoop batter into the donut pan about 2/3 full in each tray. Bake in oven about 11-13 minutes. Remove from oven once cooked and allow to set for 5 minutes before removing from the tray. Move donuts onto a cooling rack and continue cooking process until all the batter is used up. Once donuts are completely cool, make the glaze. Whisk together the powdered sugar, cocoa powder, salt, milk, and vanilla extract. Once glaze is to deisred consistency, dip the tops of each donut into the glaze to cover entirely. Set back onto cooling rack and add sprinkles if desired. Enjoy!!

    What if you don’t have a donut pan? Can you use a cupcake pan?

    Yes! A cupcake pan works great! Just fill it about 1/2 full and bake for roughly the same time. You will have a yummy donut muffin, 🙂
