Easy Chicken and Rice bake

My family and I buy our chicken in bulk from a company called Zaycon foods. We get boneless, skinless, chicken breasts for a great cost, and can buy 40 pounds at a time. We vacuum seal it and put it in our freezer. Needless to say, we eat lots of chicken, since we have so much hehe!! This recipe is super simple, full of flavor, and makes both chicken and rice together, so all you have to do is throw a side of fruit or biscuits, etc with it and you have a complete meal.


4 boneless, skinless chicken breasts
2 cups Instant Rice, uncooked (brown or white works)
1 package Lipton onion soup mix
1 can cream of celery soup
1 can cream of chicken soup
1 can water


Mix together soups, water, and rice. Pour into a buttered casserole dish. Lay chicken breasts on top of rice mixture. Sprinkle onion mix on top of chicken, evenly. Cover dish with tin foil and bake in preheated oven (275) for about 1 1/2 hours.

    I do one that is a variation of the Campbell’s chicken and rice casserole but the last time I breaded the chicken in the Kraft Fresh Take instead of using Shake n Bake that I ususally use and it was amazing. This looks like it has more soup than my recipe. I wonder why? I have some of the Lipton soup so I might just have to try this 🙂
