    Sheet Pan Chicken Fajitas

    This easy Sheet Pan Chicken Fajitas recipe is perfect for a quick and delicious dinner. Simply toss all the ingredients onto a sheet pan and let the oven do the work.     Don’t you just love an easy, flavor packed dinner idea? These Chicken Sheet Pan Fajitas are a big hit in my house because they allow everyone to load up their favorite toppings, the prep work can be done earlier in the day, and clean up is a breeze! These are perfect to make on busy weeknights, for a meal train option, or even to prepare as a quick lunch to enjoy during the week.

    Sheet Pan Fajitas Ingredient Notes

    Below is a brief overview of the simple ingredients needed. To see printable recipe card with exact ingredient amount and directions, scroll to the bottom of this post.

    • Chicken– you will want to use boneless skinless chicken breasts cut into slices. It's best to slice the chicken against the grain so that it's tender, not chewy
    • Onion– I used a large yellow onion and cut it into thin slices. White onions work too.
    • Peppers– any color bell peppers work, we love using all different colors to make these a bit more visually appealing. Feel free to add extra peppers if you like lots of veggies on your plate.
    • Oil– I use avocado oil, however, vegetable oil or olive oil works great too.
    • Lime– you’ll need the lime juice from one large lime.
    • Tortillas– I love using flour tortillas, however, corn tortillas work great too, or you can enjoy the meat and vegetables on their own/ in lettuce wraps.
    • Seasoning– store bought or homemade fajita seasoning (see recipe below) works great.

    How to make this Chicken Fajitas Sheet Pan recipe

    1. Preheat the oven to 425°F.
    2. Cut the bell peppers into ½-inch slices and add them to the baking sheet.
    3. Cut the onion into thin slices and add them to the sheet.
    4. Cut the chicken into ½-inch to 1-inch thick strips and add them to the sheet.
    5. Add the oil and fajita seasoning to the baking sheet. Toss with your hands until everything is well coated, then spread into an even layer. It's okay if chicken pieces are on top of the vegetables.
    6. Place in the oven and bake for 10 minutes. Remove from the oven, toss everything, and return to the oven for another 10 to 15 minutes, or until the chicken is cooked.
    7. Remove from the oven and squeeze the fresh lime juice over the fajitas. Heat the tortillas in the microwave in 30-second intervals until warmed.
    8. Serve in the warmed tortillas and enjoy.

    How to make Homemade Fajita Seasoning

    This simple recipe comes together quickly and allows you to control the amounts of each ingredient added. Simply combine the ingredients below in a small bowl.

    • 1 tablespoon chili powder
    • 1 ½ teaspoon paprika
    • 1 ½ teaspoon cumin
    • ½ teaspoon onion powder
    • ½ teaspoon garlic powder
    • ¼ teaspoon dried Oregano
    • ¼ teaspoon Cayenne pepper
    • Salt and Pepper to taste.

    Topping Ideas for Sheetpan Chicken Fajitas

    We love customizing our fajitas by adding lots of yummy toppings! Here are just a few of our favorites:

    • Sour Cream
    • Salsa
    • Diced Avocado or Tomatoes
    • Jalapeno Slices
    • Hot Sauce
    • Shredded Cheese (my favorite is Cotija Cheese)
    • Cilantro

    What to serve with Sheet Pan Chicken Fajitas

    Although on busy nights, I typically serve this on it’s own, sometimes when I have more time to prep, I love to add a few side dish options. Here are my favorites:

    • Chips and Restaurant-Style Tableside Guacamole or Easy White Queso
    • Easy Mexican Rice
    • Homemade Refried Beans
    • Mexican Corn Casserole
    • Easy Mexican Charro Beans

    Make Ahead and Storage Instructions

    • Store leftovers in the refrigerator for 2-3 days and reheat in the microwave. If freezing leftovers, place in a freezer safe container for up to 3 months. Allow to thaw before reheating.
    • Making Ahead: Slice all of the veggies and cut the chicken and store separately in the refrigerator until ready to bake. Make the seasoning up to several days in advance and store it in a jar at room temperature.
    • To freeze, season the chicken and vegetables with fajita seasoning. Place in a freeze safe bag and place in a freezer up to 3 months. Thaw in fridge and place on cookie sheet to cook as directed once thawed.

    How can I adapt this recipe to be made in the slow cooker?

    To make this in the slow cooker, add all the ingredients to your slow cooker including about 1 cup chicken broth. Cook on high for about 4 hours or low for about 6-8 hours. Serve in tortillas with favorite toppings.

    Can I make these vegetarian?

    Absolutely! Omit the chicken and add in some black beans, mushrooms, sweet potatoes, and any other vegetables desired. Serve on tortilla shells.

    What kind of sheet pan should I use?

    The bigger the better! I use a 13×16, however, whatever you have on hand should work great. You want to make sure the chicken and vegetables have enough space to cook through evenly.

    Ingredients
      

    • 2 chicken breasts large, sliced into ½ inch slices
    • 1 yellow onion sliced
    • 3 bell peppers de-seeded and sliced
    • 2 tablespoon oil avocado, canola, or olive oil
    • juice of one large lime
    • 6-8 tortillas
    • 3 tablespoon fajita seasoning

    Instructions
     

    • Preheat oven to 425 degrees.
    • Cut the bell peppers and onions into slices and add to the baking sheet.
    • Cut chicken into ½ inch slices and add to the baking sheet.
    • Pour on the oil and sprinkle the seasoning on top evenly. Toss with your hands until everything is well coated. Spread into an even layer. Add additional seasoning if desired.
    • Place baking sheet into preheated oven and bake for 10 minutes. Remove from oven to toss everything before placing back into oven to cook another 15-20 minutes, or until chicken is cooked through and veggies are tender.
    • Remove from oven and squeeze the lime juice over the fajitas. Serve in warmed tortillas with desired toppings.
