Years ago, when I bought my first Instant Pot, I was beyond intimidated with the kitchen appliance. If I am being completely honest, it sat in the box unopened for about 2 months before I mustered up the courage to open it and try my first recipe. I chose to make Jasmine Rice as my first trial because rice is inexpensive and I wouldn’t be upset if I had messed it up. After a success with the rice, this potatoes green beans and sausage meal was my next trial and again, it was a success. That goes to show just how “no-fail” this recipe truly is. If I can make it perfectly after having used the Instant Pot only one time previously, I promise you too can do this!

- Chicken Broth– I use a low sodium broth to cut down on the salt content in this recipe.
- Smoked Sausage– pick your favorite brand. I love using jalapeno smoked andouille sausage or a Cajun flavored sausage. Kielbasa works too.
- Potatoes– red potatoes or Yukon gold potatoes are best in this recipe. Russet potatoes work great too, but I have had the best results with red and yellow. You will want to cut them into quarters, but no need to peel them first.
- Green Beans– fresh or frozen green beans work, however, I have found that fresh green beans work best as they don’t get mushy like frozen may. Canned green beans work in this as well.
- Cajun Seasoning– my favorite is Chupacabra blend or Slap Ya Mama. Feel free to use whichever you have on hand.
- Salt/ Black Pepper– to taste. You can omit the salt if your Cajun seasoning has salt in it.
- Butter– I use unsalted butter and cut it into small squares.
Recipe Substitutes and Variations
- Feel free to add in a diced onion for added flavor. You would add it into the pot prior to sealing and pressurizing.
- Baby carrots can be used in place of the green beans. Same cook time and they come out perfectly tender.
- If you don’t have chicken broth or chicken stock on hand, water works too. I recommend adding additional seasoning as the water doesn’t add flavor like chicken broth does.
- For crispier sausage pieces, add them to the pot first on the sauté setting and cook until golden brown.
- Diced ham or bacon can be used in place or in addition to the andouille sausage if preferred.
How to make Instant Pot Smoked Sausage, Green Beans, and Potatoes
- Pour chicken broth into Instant Pot.
- Add the sausage, potatoes, and green beans into the pot.
- Sprinkle the seasoning, salt, and pepper on top and toss with a spoon.
- Cut the butter into small pieces and place them into your electric pressure cooker.
- Cover Instant Pot with lid and ensure valve is in sealing position.
- Cook manual, high pressure, for a cook time of 3 minutes followed by a quick release.
- Once pressure releases and pin drops, remove lid and stir contents.
- Serve immediately and enjoy!

What should I serve Instant Pot Sausage and Potatoes with?
Since this meal includes a protein, starch, and vegetable, technically you don’t need to serve anything with it. However, if your family is anything like mine, they like a few options on their plate. Here are a few of my go to additions:
- Garlic Cheese Crescents
- Cheddar Bay Biscuits (this is my number one fav addition)
- Mini Garlic Monkey Bread
- Fluffy Bread Machine Rolls (think Texas Roadhouse)
- Side Salad or fresh fruit
Do I need to cook the smoked sausage first?
Most sausages you buy in the grocery store are already cooked. However, some are not and would need to be cooked first. Check your package first and if you need to cook it or want to get it crispy and delicious, simply cook it on the saute function of your Instant Pot.
How can I make this in the slow cooker instead?
This is the perfect crockpot meal if you don’t have an Instant Pot. Simply add all the ingredients to your slow cooker and cook on low about 8 hours, or until everything is perfectly tender. Same great meal, just a bit longer cooking time!
Can I make this Cajun sausage and potatoes meal on the stove or grill?
Absolutely! In fact, this meal can be made however needed whether that be grill, stove top, griddle, Instant Pot, Slow Cooker, etc. Add about 2 tablespoon butter to a skillet and once melted, add in your potatoes. After about 10 minutes, you can add in the beef smoked sausage and green beans. Cook until everything is crispy and delicious. You won’t need to use the chicken broth and can season as desired.
Storing and Reheating Instant Pot Sausage, Green Beans, and Potatoes
- Serve immediately, or once fully cooled, store in an airtight container for up to one week. Reheat for a few minutes using the microwave.
- This can be frozen for up to 2 to 3 months. Thaw in the refrigerator and reheat in microwave for a few minutes.

- 3/4 cup chicken broth
- 12 oz smoked sausage (any flavor you prefer), sliced
- 1 lb red or yellow potatoes, quartered

You can use chicken, ham, bacon, and more in this! My only suggestion is to pre-cook the meat at least mostly due to the short cook time in the IP! Enjoy!!

I make this recipe about once a week now. I love it.
I tried to change it up the last time I made it, using fewer green beans, and I threw in an onion and a zucchini. The whole think wound up being extremely mushy. Nice try, I guess.
Has anyone tried this with carrots instead of green beans?

Oh yes, unfortunately zucchini would get too mushy! I have heard lots of people using corn on the cob chunks and baby carrots in this. Everyone said it works great!

We loved this meal! And I’ve got some picky eaters! My only problem was that there weren’t any leftovers. This may be a stupid question, but if I double this do I double the broth, too? I’m making it in the Instant Pot, if that helps.

I used browned hot Italian sausage, varied the spices using a carribean rub and a spicy Mrs dash, and I reduced the butter. I used a cup of broth because I thought ip needed that. Red potatoes were fine.
