How to Make Fiesta Chicken Foil Packets

Step 1. Preheat the grill to medium heat. Cut four large sheets of heavy-duty foil and lightly spray each with cooking spray. Place one boneless skinless chicken breast onto each sheet of foil and season both sides with your desired seasoning.

Step 2. Spoon the drained Rotel evenly over each chicken breast.

Step 3. Divide the black beans evenly over the Rotel.

Step 4. Top the black beans with the corn, dividing it evenly among the foil packets.

Absolutely! Packets may be baked on shallow pan in 425°F oven 20 minutes or until chicken is no longer pink in centers. Or, to save aluminum foil, place chicken in 13×9-inch baking dish sprayed with cooking spray. Spoon bean mixture over chicken; cover dish with aluminum foil. Bake in 375°F oven 30 minutes or until chicken is no longer pink in centers
