Using fresh tomatoes and basil, this is quite healthy too!!
We served this chicken over pasta, but if you are not a pasta fan, you could definitely serve this by itself!!

Why do I need the butter at the end? I will probably leave it out unless it’s supposed to add some significant flavor.
Kristin
The butter enhances the flavor and helps blend everything. I have omitted it before and although the recipe is still delicious, it definitely wasn’t as flavorful. Hope that helps 🙂

I was wondering. Would I be able to substitute a little more dried basil for the fresh basil? I don’t have access to fresh is why I ask.
Kristin
Sure! That would work just as good! Enjoy!!
August
If I leave it the butter would that completely change the flavor?
Kristin
I don’t think it would change the flavor too much, should be just as yummy!! Enjoy!
Donna
If fresh tomato is not available, can you use cans?
Kristin
Yes, definitely!! 🙂

Made this tonight, used two large tomatoes homegrown and two Roma, added two small can of mushrooms and water instead of oil(makes the chicken very tender) and served it over Jasmine rice! This is a keeper! Thank you!!
Kristin
Oh yum!! So glad you enjoyed it! I love the changes you made to it, sounds delicious!!!
Emily
When do you add in the cheese?
Kristin
I just corrected the recipe hehe!! You add cheese on at the end prior to serving. Sprinkle desired amount on top, 🙂

Wondering if you leave skins on tomatoes?
Kristin
Yes, just cut the tops of the tomatoes and cut into small pieces, 🙂
