    Tomato Basil Chicken

    Tomato Basil Chicken is a healthy, flavorful dish that is packed with juicy tomatoes, fresh basil, garlic, and topped with Parmesan!

    For my dad’s birthday a few days ago, my mom and I made this dish together! Not only was it easy to make, but the flavor was amazing!

    Tender chicken, diced tomatoes, garlic, and Basil combined into a flavorful, healthy meal everyone will enjoy!

    Using fresh tomatoes and basil, this is quite healthy too!!

    We served this chicken over pasta, but if you are not a pasta fan, you could definitely serve this by itself!!

    Ingredients Needed:

    • Chicken
    • Salt/Pepper
    • Olive Oil
    • Tomatoes
    • Garlic
    • Butter
    • Basil
    • Parmesan Cheese

    How to prepare:

    1. Season- the chicken with salt/pepper/garlic powder/dried basil.
    2. Warm the olive oil- in a large skillet over medium high heat.
    3. Add- in chicken once the oil is hot. Cook on one side for about 4-5 minutes.
    4. Flip chicken- to other side and cook an additional 4-5 minutes, or until juices start to run clear.
    5. Add- in the tomatoes and cook for about 2 minutes.
    6. Add- in the chopped basil. Cook for 1-2 minutes.
    7. Cut butter- into small pieces and add to the skillet.
    8. Add- in the minced garlic.
    9. Turn heat down- to low and allow to simmer for about 5 minutes.
    10. Once done simmering- you can serve over cooked pasta, rice, or by itself.
    11. Sprinkle- desired amount of Parmesan cheese on top of chicken prior to serving.

    Ingredients
      

    • 1 lb chicken breast, boneless/skinless

      Why do I need the butter at the end? I will probably leave it out unless it’s supposed to add some significant flavor.

        The butter enhances the flavor and helps blend everything. I have omitted it before and although the recipe is still delicious, it definitely wasn’t as flavorful. Hope that helps 🙂

      I was wondering. Would I be able to substitute a little more dried basil for the fresh basil? I don’t have access to fresh is why I ask.

      Made this tonight, used two large tomatoes homegrown and two Roma, added two small can of mushrooms and water instead of oil(makes the chicken very tender) and served it over Jasmine rice! This is a keeper! Thank you!!

        I just corrected the recipe hehe!! You add cheese on at the end prior to serving. Sprinkle desired amount on top, 🙂
