Cilantro, jalapenos, and tomatoes, for garnish
Instructions
Preheat the grill to medium heat.
Cut four large sheets of heavy-duty foil and lightly spray each with cooking spray.
Place one boneless skinless chicken breast onto each sheet of foil and season both sides.
Divide the Rotel, black beans, and corn evenly among the packets.
Fold and seal the foil packets. Place them on the grill, vegetable side down, and cook for 10 minutes.
Carefully flip the packets and continue cooking for 10-15 minutes, or until the chicken reaches an internal temperature of 165°F.
Remove the foil packets from the grill and carefully open them. Sprinkle with cheese and add any desired garnishes before serving.
Notes
Oven Instructions:
Bake the foil packets at 400°F for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F.
Chicken Option:
Chicken thighs can be used in place of chicken breasts but may require additional cooking time.
Foil Tip:
Heavy-duty foil works best and helps keep the packets sealed while cooking.
Optional Add-Ins:
Bell peppers, onions, zucchini, broccoli, and carrots are great additions.
Parchment Paper:
If desired, place a sheet of parchment paper between the food and foil before sealing the packets.
