CAKE
- Flour– all purpose
- Sugar– granulated sugar adds the perfect sweetness to the coffee cake
- Baking Powder/Salt– this helps the cake rise to perfection
- Egg– room temperature
- Milk– this provides the moisture and helps combine things into one tasty sweet treat, buttermilk is a great alternative option too
- Vanilla Extract– pure is best versus imitation
- Butter– unsalted and melted
- Strawberries– use fresh strawberries for this recipe as frozen strawberries have too much water in them and will make this cake too wet and soggy
CRUMB TOPPING
- Flour– all purpose
- Sugar– adds just the right amount of sweetness to the topping
- Butter– cold as you’ll use a pastry blender to combine ingredients into coarse crumb mixture, unsalted butter

- Raspberries, Blueberries, and Blackberries make great substitutions in place of the strawberries.
- Add in 1/2 cup chopped pecans or walnuts to the batter for an added crunch.
- Brown your butter before adding it into the cake.
- Add 1 teaspoon cinnamon to the cake for a hint of warm spice. If you are a cinnamon lover, you can increase up to 3 tsp.
How to make Strawberry Crumble Coffee Cake
CAKE
- In a small bowl, combine all purpose flour, sugar, baking powder, salt. Set aside.
- In a medium bowl, combine egg, milk, vanilla, and melted butter
- Slowly add wet mixture to dry ingredients mixture and stir cake batter until just combined.
- Pour batter into a greased 8×8 cake pan.
- Place sliced strawberries on top of batter in even layer.
CRUMB TOPPING
- Using pastry blender, combine flour, sugar and cold butter until crumb topping is formed.
- Sprinkle crumble topping evenly over top of strawberries
- Place pan in preheated oven (350*) and bake 30-35 minutes, or until toothpick inserted in center comes out clean.
- Remove and let cool for 5-10 minutes. Enjoy!

Although I have not tested this with a gluten free flour, I believe it should work great using gluten free flour at a 1:1 ratio.
What other berries can I use in place of the strawberries?
Blueberries, Blackberries, and Raspberries are all great options in place of the strawberries!
Can I double this recipe and how?
Absolutely! Simply double the ingredients and prepare in a 9×13 baking pan. Works great and leftovers are always enjoyed!
Can I use brown sugar in place of the white sugar?
Although I haven’t tried it, I recommend using half white sugar half brown sugar. If using brown sugar, I recommend light brown sugar so the color of the cake isn’t too dark and the strawberries aren’t overpowered.
