Taco Casserole

This past weekend was laid back and exactly what my husband and I needed. We ended up going on a spontaneous trip to Galveston and we also got to have a date night on Sunday . By date night I mean; daddy , mommy and baby Emelee . So by last night I was extremely tired. I needed something quick and easy to make for dinner.  I looked in my pantry and I was craving nachos so I decided to whip this up for the whole family.  I also had like 600 (more like 10, I wanted to add some drama) hatch green chiles and was trying to figure out what exactly to make with them.  This seriously was perfect! The chiles added flavor without the kick. My kids never even knew they were in there. 

1 lb of ground beef
1 small onion, chopped
1 hatch greens , chopped and seeded
1 cup of your favorite mild salsa (I used Joe T Garcias) 
1 can of refried beans (I used Rosarita’s traditional) 
1/3 cup of water
1 package of Taco seasoning 
1 package (12) of Yellow corn taco shells
2 cups of cheddar cheese shredded (divided)
Preheat the oven to 375 degrees. Grease a medium size baking dish. Cook the beef, onion and green chiles until the beef is brown. Drain grease. Stir in the salsa,water,seasoning mix and beans. Cook on low for about 3 minutes , or until fully mixed.  Layer the bottom of your dish with the broken shells. Pour half of the meat mixture over it evenly and sprinkle with cheese. Repeat with the remaining ingredients. Bake for about 20 minutes or until the cheese is melted.  Remove and serve! 
Topping options : sour cream, guacamole, pico de gallo

    I was interested to see your recipe because I do something with rice and taco meat in a skillet then throw the cheese on top to melt. I have never even thought of doing it in the oven but it would probably work 🙂 Great idea!!! I love the exaggeration…my husband makes fun of me when I do because I do it all the time.

    Hatch greens is a type of pepper available, however, if you cannot find it at the store, you can also use green Chile peppers!!
