Hello, October! We've officially flipped the calendar to a new month, and this week's dinners are following right along. Think creamy soup, stuffing-topped pork chops, beef and noodles, and a few quicker meals mixed in to keep busy weeknights manageable.
This week has a nice mix of chicken, pork, sausage, and beef, so dinner won't feel repetitive. We're kicking things off with a one-pot soup, sneaking in a takeout favorite midweek, and ending with a fun twist on classic chicken pot pie. Let's get dinner planned!

5 Easy Dinners for the Week
Monday: Ultimate Creamy Sausage & Tortellini Soup
Starting October with a soup just feels right! This creamy one-pot dinner combines Italian sausage, cheese tortellini, spinach, and a flavorful broth. Best of all, it's ready in about 30 minutes, so Monday dinner doesn't have to be complicated.
Tuesday: Easy Orange Chicken
Skip the takeout tonight! This homemade Orange Chicken is sweet, tangy, and easy to serve over rice for a simple weeknight meal. Add steamed broccoli or another favorite veggie on the side and dinner is ready to go.
Wednesday: Pork Chops with Stuffing
Here's where we're really bringing in those October dinner vibes. Juicy pork chops topped with seasoned stuffing make an easy oven-baked meal with plenty of comfort-food flavor. Serve with green beans, roasted vegetables, or mashed potatoes to round things out.
Thursday: French Onion Beef and Noodles
By Thursday, quick and easy sounds pretty good! This one-pot dinner combines beef and tender egg noodles with a creamy French onion sauce and is ready in about 25 minutes. Even better, fewer dishes to wash afterward!
Friday: Chicken Pot Pie Muffins
We made it to Friday, so let's have a little fun with dinner. These individual Chicken Pot Pie Muffins pack chicken, vegetables, cheese, and classic pot pie flavor into biscuit cups. They're ready in about 20 minutes and are great for a casual Friday night meal.
Before the Week Gets Busy…
A few minutes of planning now can make dinner much easier later!
Pick up the sausage and spinach for Monday's soup and keep refrigerated tortellini on hand so everything is ready to toss together.
For Easy Orange Chicken, cook your rice ahead of time or chop your vegetables earlier in the day. Leftover rice works great here too!
Wednesday's Pork Chops with Stuffing is an easy one to prep before dinner. Have your pork chops thawed and stuffing ingredients ready so all that's left is assembling and baking.
Save Thursday and Friday for those nights when you need dinner on the table FAST. Both meals come together in about 25 minutes or less, which means you can finish the week without spending your entire evening in the kitchen.
Another Week, Done!
Five dinners are officially off the "what in the world am I making tonight?" list. 🙌 Save this meal plan before grocery shopping, grab what you need for the week, and come back each night when it's time to cook.
And if your week changes along the way? Swap the days around! There are no meal-plan police around here. 😉
