Fall officially arrives this week, and I’m more than ready to bring some comfort food back to the dinner table! With the first day of fall on September 22, this week’s meal plan has just the right mix of easy weeknight dinners and comforting favorites to welcome the new season.
We’ve got an easy casserole, slow cooker enchiladas, classic salmon patties, chicken pot pie flavors, and cheesy meatball subs to finish off the week. Five different dinners, one less thing to figure out each night!

Five dinners to make this week:
Monday starts with Chicken Broccoli Casserole, an easy all-in-one dinner made with chicken, broccoli, rice, and a creamy sauce. It’s a great way to kick off the week with a family-friendly meal that doesn’t need a bunch of sides to complete it.
Tuesday brings Slow Cooker Ranch Chicken Enchiladas to the table. Let the slow cooker handle most of the work, then finish everything off with tortillas, cheese, and plenty of enchilada flavor for an easy dinner after a busy day.
Wednesday we’re going old-school with Old Fashioned Salmon Patties. Crispy on the outside and tender on the inside, these salmon patties are an easy midweek dinner that pairs perfectly with vegetables, potatoes, or a fresh salad.
Thursday features Chicken Pot Pie Bubble Up Casserole, combining creamy chicken and vegetables with refrigerated biscuits for all those classic chicken pot pie flavors without the extra work of making a pie crust.
We’re ending the week with Easy Meatball Subs on Friday. Meatballs, marinara sauce, and plenty of melted cheese are piled onto toasted rolls for a fun dinner that’s perfect for Friday night or enjoying while watching the game.
Prep now, thank yourself later:
Before heading to the grocery store, check your pantry and refrigerator for staples like rice, shredded cheese, tortillas, marinara sauce, refrigerated biscuits, and everyday seasonings. A quick pantry check can save you from buying something you already have hiding in the back. We’ve all been there!
Prep the Chicken Broccoli Casserole ahead of time if Monday is looking especially busy. Having dinner ready to bake makes that first weeknight a whole lot easier.
Get Tuesday’s chicken going in the slow cooker earlier in the day so most of the work is already done by dinnertime.
If you’re serving potatoes or vegetables with Wednesday’s Salmon Patties, wash and prep them earlier in the week so they’re ready to cook.
Thursday’s Chicken Pot Pie Bubble Up Casserole is already designed to keep prep simple, making it a good recipe to save for one of your busiest evenings.
For Friday’s Meatball Subs, pair them with chips, fries, a simple salad, or a fresh fruit salad. Keep dinner casual and enjoy the start of the weekend!
Easy sides to round out the week:
Keep side dishes simple with roasted broccoli, bacon wrapped green beans, loaded mashed potatoes, garden salads, garlic bread, fresh fruit, or roasted fall vegetables. With several filling dinners on this week’s menu, there’s no need to overcomplicate things.
