    Back-to-school season is keeping everyone busy, and with September just around the corner, easy dinners are more helpful than ever. This week’s meal plan is packed with family-friendly meals that make getting dinner on the table a little easier, even when weeknights are filled with school, activities, and everything in between.

    This week is also an extra special one around here because Wednesday is my 40th birthday! Of course, I had to put one of my all-time favorite dinners on the menu to celebrate. From quick chicken lettuce wraps and easy casseroles to my favorite chicken cobbler and a fun nacho night, there’s plenty to look forward to this week.

    What’s for dinner this week?

    Monday starts with PF Chang’s Chicken Lettuce Wraps, a restaurant-inspired favorite made with seasoned chicken and crisp lettuce leaves. They’re a lighter way to start the week and perfect when you need something quick after a busy day.

    Tuesday brings Pork Chop and Rice Casserole to the table. Tender pork chops and rice bake together for an easy family dinner with minimal fuss, making it a great choice for a busy school night.

    Wednesday is an extra special one because it’s my 40th birthday, and we’re celebrating with one of my all-time favorite dinners: Chicken Cobbler with Cheddar Bay Biscuits! Creamy chicken and vegetables are topped with cheesy biscuit goodness for the ultimate comfort food meal. If I’m picking dinner on my birthday, this is definitely what’s going on my plate!

    Thursday features Rice a Roni Chicken Casserole, an easy chicken and rice dinner that comes together with simple ingredients. It’s a great option for those nights when you want something comforting without spending all evening in the kitchen.

    We’re ending the week with Ground Beef Nachos on Friday. Crispy tortilla chips piled with seasoned ground beef, melted cheese, and your favorite toppings make this an easy dinner that’s perfect for kicking off the weekend.

    Get ahead for the week:

    Before heading to the grocery store, check your pantry and refrigerator for staples like rice, shredded cheese, tortilla chips, seasonings, chicken broth, and canned vegetables. You may already have several ingredients needed for this week’s meals.

    Prep the filling for Monday’s chicken lettuce wraps ahead of time and store it in the refrigerator. When dinner rolls around, simply reheat it and serve with fresh lettuce.

    If Tuesday is especially busy, gather the ingredients for the Pork Chop and Rice Casserole the night before so everything is ready to assemble.

    For Wednesday’s Chicken Cobbler, keep the ingredients on hand and let someone else make dinner. It is your birthday, after all! 😉

    Prep your favorite nacho toppings ahead of time for Friday. Diced tomatoes, shredded lettuce, sour cream, salsa, candied jalapeños, avocado, and green onions make it easy for everyone to customize their plate.

    Round out this week’s dinners with simple sides like fresh fruit, roasted vegetables, bacon wrapped green beans, corn on the cob, or a crisp garden salad.
