    Pesto Chicken Sliders

    Using only 8 ingredients, these easy, cheesy Pesto Chicken Sliders come together in no time and make a great appetizer/meal option!

    If you have kids, you know how busy life can get once they get involved in sports, activities, and school. Having three kids, I am almost always on the run!

    Last week, I had one kid busy with wrestling, another off to a golf lesson, and one at cheerleading. Needless to say, dinner needed to be quick and easy.

    Since I had some pre-cooked chicken in my freezer, I pulled that out along with some Hawaiian rolls and decided to prep these tasty sliders in the afternoon.

    Come dinnertime, I was able to put these in the oven, bake them to perfection, and leave them for my family to enjoy once they had time.

    Shredded chicken, a flavorful Pesto sauce, shredded cheese, and a tomato slice all on a fluffy Hawaiian roll!

    Later that evening, I asked my kids and hubby what they thought and everyone raved they were a favorite! Of course, I had made a few variations of these over the years, but never with Pesto and tomatoes. Since kids can be picky, I was a little nervous about the Pesto, but they loved it!

    I took a shortcut and chose to use store bought Pesto. If you have a few extra minutes, definitely make a homemade Pesto because its even more flavorful and healthy. Here is my fav recipe, homemade pesto sauce! Of course, store bought works great too, so take the shortcut like I did if you prefer!

    Not only can these sliders be great meal options, but they are even great appetizer options! They reheat perfectly, can be prepared ahead of time, and you can change it up to fit your preferences. If you love Pesto, add even more on. Don’t like tomato? Omit! Change up the cheese from Mozzarella to Swiss or Parmesan. You can even serve the chicken in a wrap or on hamburger buns. So many options, all turning out great!

    Since I ended up making about 12 sandwiches and we had a few extra, my kids took one each in their lunches and enjoyed them room temperature.

    I have also reheated these in my microwave, air fryer, and toaster oven and they crisp right up and are just as good as on day one!

    Ingredients Needed:

    Shredded Chicken

    Pesto Sauce

    Mozzarella Cheese

    Hawaiian Rolls

    Garlic Salt

    Butter

    Parsley

    How to prepare:

    Cook and shred chicken.

    Using half the Pesto, toss the chicken and Pesto together.

    Cut Hawaiian rolls in half and place bottom half of rolls into pan.

    Spread remaining Pesto sauce on top half of rolls.

    Layer chicken on bottom half of rolls.

    Sprinkle shredded cheese evenly over chicken.

    Place a tomato slice on top of cheese, followed by placing the top half of rolls on top to create sandwiches.

    In a small bowl, add the melted butter, Parsley, and garlic salt together.

    Brush mixture on top of rolls.

    Cover pan with aluminum foil and place pan in preheated oven, 375 degrees, for about 25 minutes.

    Equipment

    • Mixing Bowls
    • Pastry Brush
    • 9×13 baking pan

    Ingredients
      

    • 1 lb chicken *boneless/skinless, cooked and shredded
    • ½ cup Pesto sauce
    • 1 cup Mozzarella cheese *shredded
    • ½ teaspoon garlic salt
    • 1 teaspoon Parsley
    • 2 tbsp butter *melted
    • 1 tomato *sliced
    • 12 Hawaiian rolls

    Instructions
     

    • Cook and shred chicken. Set aside.
    • Cut Hawaiian rolls in half, placing bottom half of rolls into 9×13 pan.
    • In a medium bowl, combine the shredded chicken and ¼ cup Pesto sauce.
    • Spread remaining ¼ cup Pesto sauce on top half of rolls.
    • Add chicken mixture evenly to bottom half of rolls.
    • Sprinkle cheese evenly over chicken, followed by 1 tomato slice per roll.
    • Add the top half of rolls on top of the tomato slice to form sandwiches.
    • In a small bowl, combine melted butter, Parsley, and garlic salt.
    • Brush mixture evenly on top of rolls.
    • Cover pan with aluminum foil and place pan into the preheated oven (375*).
    • Bake for about 15-20 minutes. Remove and enjoy!
