Classic Potato Salad

My husband and I are potato salad fans, especially when we grill in the summer. For the longest time, I thought potato salad was hard to make and would not turn out good, so I avoided making it and would only buy it from the store. After going to several BBQ’s and experiencing homemade versions, I decided I needed to try it as well. Turns out, it is quite simple to make and in my opinion, way better tasting than the store bought versions. Although we have another potato salad already posted on our blog, I figured you can never have enough versions right? This one is quite yummy due to the potato marinade that goes on it while potatoes are still warm! We served this in addition to our Smokey Grilled Pork Chops! Yummy!!!

Ingredients:

5 medium potatoes (about 2 1/2 pounds)
4 hard boiled eggs, chopped
3/4 cup mayonnaise
1/2 tsp salt
1 cup chopped celery (optional)

For the marinade:

1/4 cup vegetable oil
1 tbsp vinegar
1 tbsp lemon juice
1/2 tsp sugar
1/2 tsp yellow mustard
1/4 tsp salt
1/2 tsp Paprika

Directions:

Rinse, peel and slice potatoes into small cubes. Place potatoes in a large pot and cover with water. Boil potatoes until just tender. Be sure not to over-boil them as they will turn into mashed potatoes. While potatoes are cooking, mix the marinade ingredients together in a small bowl. Once potatoes are tender, drain water and place potatoes in a bowl. Pour 3/4 of marinade over potatoes, tossing to coat evenly. *Yes, pour the marinade over potatoes while potatoes are warm. Set bowl in the refrigerator to cool at least one hour. Once chilled, remove bowl from refrigerator and pour remaining 1/4 marinade on potatoes, along with 3/4 cup mayonnaise. Mix well. If you prefer a creamier salad, add an additional 1/4 cup mayonnaise. Add in the chopped hard boiled eggs, celery if using, and salt. Toss to mix everything evenly and serve or place back in refrigerator until ready to eat!!
