A few weeks ago, I had ordered new mini loaf pans. My original ones were quite old, and they weren’t the non-stick kind, so needless to say, they needed to go. When my new ones arrives, I knew I had to try them out, so I tried this new version of banana bread! This may go down as my new “go to” bread. It is the same banana bread I love, only it has a cinnamon/sugar taste added! YUM!!
There is nothing better then having a few loaves in the freezer to pull out on the weekends. It also makes perfect gifts and snacks to bring to play-dates for the kids!!
I decided to make the bread during my kids nap-time. My six year old was upstairs reading and when he smelled the bread, he came downstairs and said “wow mama, that smells so good, ill taste it for you”. I ended up cutting him a few slices and he was in love with it. When my other two kids woke up, they too loved it. I heard a lot of “mama, you make the best snacks” and “mama, we love your food”. He-he!!!
Definitely try it!! Its the perfect way to use up those bananas!! If your house is like mine, where bananas rarely last long in the house without being eaten up first, go ahead and buy an extra bunch and stick them in the freezer!!
3 bananas, over-ripe, mashed
1/3 cup butter, melted
1/2 cup sugar
1 tsp vanilla extract
1 tsp baking soda
Pinch of Salt
1 1/2 cups flour (I used 1 cup all-purpose, 1/2 cup whole wheat pastry flour)
For the Cinnamon Layer:
1/4 cup sugar
1 tbsp ground cinnamon
In a large bowl, mix together the bananas, melted butter, sugar, egg, and vanilla. Add in the baking soda, salt, and flour. Do not over-mix. In a small bowl, add the sugar and cinnamon together. Grease one large loaf pan, or 3 mini loaf pans. Pour batter until about halfway in each pan. Sprinkle cinnamon/sugar mixture on top, and cover with another layer of batter. Once each pan has the batter (with the cinnamon/sugar in the middle), sprinkle more cinnamon/sugar on top. Place in a preheated oven (350) for about 45-50 minutes if using large loaf pan, 30-35 minutes if using mini pans!
