    Cast Iron Cherry Cobbler

    Using fresh cherries, this Cast Iron Cherry Cobbler is packed with flavor and makes quite a tasty dessert! Serve with a scoop of ice-cream and you have the perfect sweet treat!

    Believe it or not, I am not typically a fruit dessert fan. Cobblers, tarts, pies, and more are just not my thing. I’m more of a chocolate fan, so brownies, cakes, and more, haha!

    However, my son is a HUGE fruit fan! For his birthday, he always requests my Banana Pudding Poke Cake or Peach Cobbler Crisp.

    A few weeks ago, I noticed cherries on sale at the grocery store. I tend to buy the jarred kind versus fresh, but since the fresh ones were on sale, I grabbed a bag and brought them home.

    My son found the bag within an hour of them being home, and immediately went to town enjoying them. As he was eating them, he mentioned using them in place of peaches in a cobbler.

    Since I was in the mood for a new dessert, I ran with the idea and began pitting the cherries.

    We chose to make this cobbler in our cast iron skillet because we put ours on the smoker, but you can also put this together in a baking pan and toss into your oven, either way works great!

    The cherry mixture was quite flavorful and fresh tasting, and the streusel topping was the perfect accent to sweeten it up!

    We served ours in bowls with a scoop of vanilla ice-cream and the entire family enjoyed, myself included! Although not chocolate, this was a great change a pace and I definitely plan on making again!

    Cast Iron Cherry Cobbler

    Equipment

    • Cast Iron Skillet
    • Sauce Pan

    Ingredients
      

    Cherry Filling

    • 3 cups pitted cherries
    • ¾ cup sugar
    • ¼ cup cornstarch
    • ½ tablespoon almond extract

    Topping

    • ½ cup flour *all purpose
    • ½ cup sugar
    • ½ cup butter *cut into small pieces
    • 1 tablespoon cinnamon
    • ½ teaspoon salt

    Instructions
     

    • Preheat oven to 400 degrees (or smoker)
    • Add cherries to a saucepan and cook over medium heat for about 10 minutes, stirring often.
    • Add in the sugar, cornstarch, and almond extract.
    • Turn heat to low and allow to simmer for about 3-5 minutes, or until mixture thickens up slightly.
    • Remove from heat and pour cherry mixture into a cast iron skillet or baking pan. *I used a 10.25 inch cast iron skillet, an 8x8 baking pan works too
    • In a medium bowl, make the topping by combining the flour, sugar, cinnamon, and salt.
    • Cut in the butter using two forks or a pastry blender until a crumbly mixture is formed.
    • Drop topping evenly on top of the cherry mixture.
    • Place cast iron skillet into oven or onto smoker and cook for about 30-35 minutes, or until golden brown on top.
    • Remove from oven/smoker and serve in bowls as is or with a scoop of ice-cream.
