Pumpkin Muffins

With the first day of Fall being this past Sunday, I decided to kick it off with my first pumpkin recipe of the season! If you check out our subject category, you can tell we love pumpkin! You will be seeing LOTS of pumpkin recipes coming up soon! Nothing says Fall more than a yummy pumpkin recipe, right? I decided to make these muffins for breakfast and they were such a hit. My kids typically eat one muffin and are full, not this time however. Each kid had two muffins, and my oldest had three, hehe! I definitely call these a winner! 


3 cups flour
1 1/2 tbsp pumpkin pie spice
1 tsp ground cinnamon
1/2 tsp ground nutmeg
2 tsp baking soda
1 1/2 tsp salt
2 cups sugar
1 can (15 oz) pumpkin
4 eggs
1/2 cup vegetable oil
1/2 cup water


 In a bowl, combine the flour, pumpkin pie spice, cinnamon, nutmeg, baking soda, and salt. In a separate bowl, combine the sugar, pumpkin, eggs, vegetable oil, and water. Slowly add the dry mixture into the wet mixture and stir until just combined. Line a muffin tray with liners or grease each cup. Pour batter about 2/3 full into tray. Bake in a preheated oven, 350, for about 25 minutes. Remove from oven and enjoy!
Makes about 24-28 muffins
